Air-Fried Yam (Suran) Fries

Ingredients
  

For the fries

  • 500 g suran (elephant foot yam / jimikand) peeled
  • 1 1/2 tablespoons lemon juice plus more to serve
  • 1 tablespoon peanut oil or melted ghee plus a light spray for the basket
  • 3/4-1 teaspoon rock salt (sendha namak) to taste; use regular salt on non-fasting days
  • 1/2 teaspoon black pepper powder
  • 1/4 teaspoon red chili powder or Kashmiri chili optional; skip if your vrat rules exclude it
  • 1/4 teaspoon roasted cumin powder optional

To serve

  • lemon wedges
  • plain yogurt or farali dip optional
  • chopped cilantro optional

Instructions
 

Prep the suran

  • Put on gloves (or oil your hands). Peel the rough brown skin from the suran until you reach the pale flesh. Rinse briefly.
  • Cut into fry-shaped sticks about 1/2 inch thick and 3 to 4 inches long. Trim any dark spots.
  • Place the sticks in a bowl. Add the lemon juice and toss so every piece is coated. Rest 10 minutes. This step reduces itchiness and stickiness.
  • Optional for extra-soft centers: transfer the sticks to boiling water for 3 to 4 minutes until just fork-tender at the edges but not falling apart. Drain well.
  • Spread the sticks on a towel and pat completely dry. Moisture is what keeps air fryer fries from crisping.

Season and air fry

  • Return the dry sticks to a dry bowl. Add peanut oil or ghee, sendha namak, black pepper, and chili or cumin if using. Toss until lightly coated.
  • Preheat the air fryer to 380°F (190°C) for 3 to 5 minutes. Lightly oil the basket.
  • Arrange the suran in a single layer. Air fry 12 to 15 minutes, shaking or flipping halfway, until the edges are golden and blistered and a thick stick feels tender when pierced. If your air fryer runs hot, check at 10 minutes.
  • Taste one fry. Add a pinch more sendha namak and a squeeze of lemon while still hot. Serve immediately.

Notes

Itchiness fix: Lemon juice is non-negotiable for me on raw suran. If you skip it, a short boil helps, but still dry the sticks well before oiling.
Oil is a mist, not a bath: One tablespoon for 500 g is enough when the air fryer is hot and the layer is single. More oil makes them greasy, not crispier.
Vrat vs everyday: For fasting, stick to sendha namak and peanut oil or ghee. On regular days, table salt and a pinch of chaat masala after cooking are fair game.
Oven option: Bake on a parchment-lined sheet at 425°F (220°C) for 20 to 25 minutes, flipping once, until edges brown. They will be a little less blistered than air fryer fries.
Make-ahead: Peel and cut up to a few hours ahead; keep submerged in lemon water in the fridge, then dry thoroughly before cooking. Cooked fries soften as they sit, so re-crisp in the air fryer 2 to 3 minutes.
Storage: Leftovers keep in an airtight container in the fridge up to 2 days. Reheat in the air fryer so the crust returns. Do not freeze; the texture turns watery.
