Air Fryer Crispy Chickpeas (Chaat-Spiced Snack)

Canned chickpeas dried well, tossed with Indian pantry spices, air fried until crisp outside and creamy inside. Finish with lemon, chaat masala, and coriander. Single-layer basket tips included.

Ingredients
  

For the chickpeas

  • 2 cans chickpeas 400 g each; about 960 g drained total; drained, rinsed, and patted very dry
  • 2 tablespoons neutral oil

Spice mix

  • 1 teaspoon fine salt or to taste
  • 1 teaspoon Kashmiri red chili powder or sweet paprika for mild color
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder optional

Optional crunch

  • 2 teaspoons besan gram flour; omit for GF unless using certified GF besan; for extra shell

To serve

  • Lemon wedges
  • Chaat masala, to taste
  • Fresh coriander leaves, chopped
  • Mint chutney or plain yogurt, for serving (optional)

Instructions
 

Prep and dry

  • Drain chickpeas into a colander, rinse well, and shake off excess water. Spread on a tea towel, cover with a second towel, and press and roll until skins look matte. Optional: rest on a plate 5 to 10 minutes while you mix spices.

Season

  • In a bowl, combine oil, salt, Kashmiri chili, cumin, coriander, garam masala, and turmeric if using. Whisk or stir until even. Add chickpeas and toss to coat every bean. If using besan, toss it in lightly after the oil coat so it does not clump; keep the layer thin to avoid raw flour taste.

Air fry

  • Preheat the air fryer to 200°C (390°F) if your model recommends preheat.
  • Spread chickpeas in a single layer with space between them. If yours runs hot, use 190°C (375°F) and add a few minutes instead of burning spices.
  • Air fry 14 to 18 minutes, shaking the basket once halfway, until deeply golden in spots and they sound crisp when stirred. Work in batches if needed; the second batch may finish slightly faster.

Finish

  • While hot, toss with lemon juice, a light dusting of chaat masala if you like, and chopped coriander. Serve warm with mint chutney or yogurt on the side.

Notes

Total time includes towel drying and a short counter rest; active cooking is shorter.
Mushy or chewy results usually mean too much moisture before cooking or a crowded basket—towel longer and use one layer.
Cooked-from-dry chickpeas work if fully tender and dried the same way as canned.
Oil-free: a light spray works but a little fat helps spice cling and browning.
Store at room temperature in an airtight container up to 2 days in a dry climate; humidity softens crunch.
Reheat in the air fryer 3 to 5 minutes at 190°C (375°F) in a single layer. Microwave softens the crust.
Oven swap: convection 200°C (390°F), single layer on a lined tray, turn once, until golden; time varies by oven.
