Prep and slice
Wash okra quickly, drain, then dry each pod with a towel. Trim stem and tip.
Slice each pod lengthwise into four long strips (six if pods are very thick). Wipe the knife dry when it starts to stick.
Coat
In a wide bowl, toss strips with turmeric, chili powder, garam masala if using, salt, besan, rice flour, and ajwain if using. Rub until evenly dusty on the cuts.
Add lemon juice and water; toss until lightly damp and coated, not pooling. Add oil and toss until evenly slick but still dry-ish on the surface.
Air fry
Lightly oil-spray the basket. Spread strips in one layer with a little air space; do not mound high.
Cook at 175°C (350°F) for about 10 minutes, shaking once halfway.
Shake again, mist lightly with oil spray if the coating looks powdery, then cook 2 minutes at 190°C (375°F). Start checking around 8 minutes the first time; use a second batch if the basket is small.
Finish
Taste for salt. Serve hot with lemon wedges and ketchup or chutney if you like.
Notes
Dry each pod and keep the board and knife dry to avoid slimy okra.If the coating tastes raw-floury, slice thinner next time or extend the first stage by one minute before the final blast.Best fresh from the basket.
