Biscoff Ladoo (Lotus Cookie)

Ingredients
  

For the ladoo dough

  • 15 Lotus Biscoff cookies about 120 g; optional; plus 2 extra cookies for coating
  • 1 tablespoon ghee 14 g; or refined coconut oil for vegan
  • 3/4 cup desiccated coconut 60 g; 20 g; unsweetened, plus 1/4 cup extra for rolling
  • 1/4 cup sweetened condensed milk 60 ml; full amount for classic richness
  • 3 tablespoons whole milk 45 ml; plus more only if needed to bind

For coating

  • Reserved fine Biscoff crumbs (from above)
  • Extra desiccated coconut (from above)
  • 1 tablespoon finely chopped pistachios or almonds optional garnish

Instructions
 

Make the crumbs

  • Pulse the 15 cookies in a food processor until fine crumbs form. Measure 1 tablespoon of crumbs into a small bowl and set aside for coating. (If using 2 extra cookies for coating, crush them separately and add to the same bowl.)

Toast the coconut

  • Warm ghee in a wide skillet over medium heat. Add 3/4 cup desiccated coconut. Stir constantly about 2 minutes until the coconut smells nutty and turns lightly golden at the edges. Do not walk away; coconut burns quickly.

Combine

  • Add all remaining cookie crumbs (not the reserved tablespoon) to the pan. Stir 30 seconds until evenly mixed.
  • Pour in condensed milk and 3 tablespoons milk. Reduce heat to medium-low. Stir constantly about 1 minute until the mixture thickens into a soft, cohesive dough that pulls away from the pan.
  • Scrape onto a plate and spread thin so it cools faster. Cool 10 to 15 minutes at room temperature, or 10 minutes in the refrigerator, until cool enough to handle without sticking badly.

Shape and coat

  • In a shallow bowl, combine the reserved cookie crumbs with the 1/4 cup extra desiccated coconut (and chopped nuts if using).
  • Grease your palms lightly with a touch of ghee if needed. Divide the dough into 16 portions (about 22 to 24 g each). Roll each into a smooth ball between your palms.
  • Roll each ball in the crumb-coconut mixture, pressing gently so the coating sticks. Place on a parchment-lined plate.
  • Chill 20 minutes to set, then serve or store.

Notes

Classic rich: uses the full 1/4 cup condensed milk for fudgy sweet-shop style ladoos. Do not reduce both milk and condensed milk or balls may crumble.
Plain coated only: no Biscoff spread center. Filled versions are softer; refrigerate and serve within 2 days.
Vegan: refined coconut oil instead of ghee; thick vegan condensed milk; confirm cookies are dairy-free for your brand.
Smaller bites: divide into 20 to 22 smaller balls for kids or tea-time nibbles.
Make-ahead: shape and coat up to 2 days ahead; store airtight in the refrigerator with parchment between layers.
Storage: refrigerate up to 5 days. Bring to room temperature 15 minutes before serving. Not ideal for long room-temperature display in hot weather.
