Equipment

  • Perforated jhara or flat skimmer with small holes
  • Wide kadai for deep frying
  • Wide saucepan for syrup
  • Slotted spoon or spider
  • Fine sieve optional

Ingredients

For the boondi

  • 200 g besan about 2 cups spooned and leveled; gram flour; sifted if lumpy
  • 1/8 teaspoon turmeric optional
  • 1 pinch fine salt
  • Water as needed (about 3/4 to 1 cup total; add in stages)
  • 1/2 teaspoon baking soda optional

For frying

  • Neutral oil with a high smoke point, about 1 to 1 1/2 inches deep in a wide kadai or pan

For the sugar syrup and bind

  • 400 g granulated sugar 2 cups
  • 200 ml water about 3/4 cup plus 2 tablespoons
  • 1/2 teaspoon green cardamom powder
  • Few strands saffron (optional)
  • 1 tablespoon ghee plus extra for palms while shaping
  • 3 tablespoons chopped mixed nuts cashews, almonds, pistachios; optional
  • 1 tablespoon melon seeds chironji; optional

Instructions

Make a smooth, flowing batter

  • Sift besan into a wide bowl. Whisk in salt, optional turmeric, and optional baking soda. Add water in thirds: lump-free paste first, then thin to a smooth ribbon slightly thicker than pakora batter but thinner than idli batter. Rest 10 to 15 minutes; whisk again. Adjust so batter breaks into round droplets through the jhara, not thick snakes.

Fry the boondi

  • Heat oil on medium until a tiny batter dot rises in about 4 to 5 seconds without burning immediately. Hold jhara just above the oil; pour one ladle of batter across the holes and move in a small circle. Fry until golden and crisp, 45 to 90 seconds per batch; drain on paper. Fewer boondi per batch avoids clumping.

Cook sugar syrup to one-thread

  • Combine sugar and water in a wide pan; heat on medium until dissolved. Add cardamom and optional saffron. Boil on medium-low until syrup forms a single thin thread between thumb and forefinger (about 8 to 12 minutes). Quick water check: syrup should form a soft, pliable piece in cold water without snapping like hard candy.

Fold boondi into syrup

  • Lower heat. Add ghee and optional nuts and melon seeds. Add fried boondi; stir until coated and the mixture clumps when pressed. If too loose, cook 30 to 60 seconds more on low, stirring.

Shape ladoos

  • Cool until warm enough to handle but still moldable, about 2 to 4 minutes. Grease palms with ghee; roll portions into rounds. Cool completely in a single layer before stacking. Store airtight 3 to 5 days in dry weather; separate layers with parchment.

Notes

Humidity shifts syrup timing; rely on thread and water tests more than clocks.
Drain fried boondi well so excess oil does not fight the syrup.
For firmer ladoos, carry syrup slightly further next batch; for softer ladoos, stop a touch earlier.
Vegan option: shape with neutral oil instead of ghee; flavor shifts slightly.
Make-ahead boondi without syrup: store cooled drained boondi airtight up to one day in dry weather;
refresh briefly in a warm oven if soft before folding into syrup.
