Make the batter
In a bowl, combine kuttu atta, mashed potato if using, cumin or ajwain, green chili, ginger if using, sendha namak, and the optional teaspoon of oil.
Add water gradually while whisking until smooth and lump-free. The batter should ribbon off the ladle like thin pancake batter — pourable, not pasty.
Rest 15 to 20 minutes. Stir. If it has thickened, loosen with 1 to 2 tbsp water so it spreads easily again.
Make the potato filling (optional)
Heat 1 tbsp ghee or oil in a small pan over medium heat. Add cumin seeds. When they crackle, add ginger and green chili. Stir 15 to 20 seconds.
Add the lightly mashed potatoes, sendha namak, and black pepper. Mix until heated through and fragrant, 2 to 3 minutes. Turn off the heat. Fold in cilantro. Keep warm.
Cook the dosas
Heat the tawa over medium heat until a drop of water sizzles and evaporates. Lightly grease with ghee or oil, then wipe off excess with a paper towel so the surface is just slick.
Pour a ladle of batter in the center. Working quickly, spread outward in a thin circle with the back of the ladle. Do not press hard; let the batter flow.
Drizzle a little ghee or oil around the edges. Cook until the top looks set, the underside is golden, and the rim lifts cleanly, about 1 1/2 to 2 1/2 minutes.
Flip gently. Cook the second side 30 to 60 seconds. For a stuffed dosa, flip back so the first side is down, add 2 tbsp filling in the center, and fold. For a plain dosa, transfer to a plate.
Wipe the tawa lightly between dosas if needed. Stir the batter before each pour. Serve hot with yogurt or chutney.

Vrat vs everyday: Fasting batches use sendha namak and skip onion and garlic. Confirm chili and spice rules with your family. This recipe does not use hing.Without potato in the batter: Skip the mashed potato and use a slightly longer rest (20 minutes). Spread a little more gently; the dosa will be crispier and a bit more fragile.Arbi binder: Swap the mashed potato in the batter for 2 tbsp boiled, mashed arbi (colocasia) if that is your fasting preference.Yogurt batter: For a softer dosa on non-strict days, whisk in 2 tbsp plain yogurt with the water. Use dairy-free yogurt if needed, or skip for a fully plant-based plate with oil instead of ghee.Make-ahead: Whisk the dry mix ahead. Add water and rest just before cooking. Batter keeps refrigerated up to 1 day; stir and thin before pouring. Filling keeps 1 day refrigerated; reheat before folding.Storage: Dosas are best fresh. Leftovers keep in an airtight container in the fridge up to 1 day. Reheat on a hot tawa with a touch of ghee; they will be firmer than when first cooked.
