Prep and soak
Peel and finely grate the carrot on the small holes of a box grater or a microplane. Pat dry lightly if very wet.
In a jar or bowl, stir together oats, milk, yogurt, grated carrot, jaggery or brown sugar, cardamom, and optional salt until evenly mixed.
The mix should look like thin porridge. Add a splash more milk if it already looks thick; oats absorb a lot overnight.
Cover and refrigerate at least 6 hours, ideally overnight, until creamy and spoonable.
Finish and serve
Stir well in the morning. Fold in ghee, then top with cashews, raisins, and pistachios.
Add a pinch of cardamom or a few drops of saffron milk if you like. Stir in a splash of milk if you prefer a looser bowl.
