Chana Dal Chaat with Pomegranate

Tender cooked chana dal tossed with onions, tomatoes, chutneys, and chaat masala, finished with pomegranate arils and crisp sev. Railway-style crunch at home. Optional shortcut uses store-bought fried chana namkeen in under ~15 minutes.

Ingredients
  

For the dal

  • 1 cup chana dal split Bengal gram; picked over and rinsed
  • 3 cups water for boiling adjust for pressure cooker per post notes
  • 1/2 teaspoon turmeric powder optional, for color
  • Salt to taste

Dressing and spice mix (whisk before assembling)

  • 2 tablespoons lemon juice more to taste
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon Kashmiri red chili powder or paprika
  • 1/2 teaspoon chaat masala plus extra to finish
  • Black salt (kala namak) or fine salt, to taste

Chutneys

  • 3 tablespoons thick tamarind chutney sweet-sour; homemade or jarred
  • 3 tablespoons green chutney cilantro-mint; adjust for heat

Salad mix-ins

  • 1 small red onion finely diced
  • 1 medium tomato deseeded and diced
  • 1 to 2 green chilies optional; finely chopped
  • 1/4 cup fresh coriander leaves chopped

Toppings

  • 1/2 to 3/4 cup fresh pomegranate arils
  • 1/2 to 1 cup thin sev chickpea noodles; optional
  • Extra chaat masala and lemon wedges, for serving

Shortcut — fried chana namkeen (~15 minutes, optional)

  • About 2 to 2.5 cups fried or roasted split chana dal snack (store-bought namkeen), salted — taste before seasoning the dressing
  • Same salad mix-ins, chutneys, dressing ingredients, and toppings as above (use less sev if your namkeen is already very salty or crisp)

Instructions
 

Shortcut (fried chana namkeen, under ~15 minutes)

  • Taste a few pieces from the bag for salt and spice level.
  • Whisk lemon spice mix with a light hand on chaat masala and kala namak; adjust after tasting.
  • Chop onion, tomato, optional green chilies, and coriander.
  • Toss fried chana dal with vegetables and herbs in a wide bowl. Drizzle half the lemon mix, fold in green and tamarind chutneys gradually. Taste before adding salt or extra sev.
  • Plate with pomegranate and optional sev; pass lemon wedges and extra chaat masala if needed. Active time about 10 to 12 minutes when chutneys and arils are ready.

Cook the dal

  • Soak chana dal in enough cold water to cover by 2 inches for 2 to 3 hours (or quick-soak with boiling water 45 to 60 minutes). Drain.
  • Stovetop: combine soaked dal, water, optional turmeric, and salt. Boil, skim foam, simmer partially covered until tender but holding shape, 25 to 40 minutes. Instant Pot: pressure cook with about 2.5 cups water and salt 5 to 6 minutes high pressure, natural release 10 minutes; check texture.
  • Drain well; spread on a plate and cool completely to room temperature before mixing.

Assemble

  • In a large bowl, gently fold cooled dal with onion, tomato, optional green chili, and coriander.
  • Whisk lemon juice, cumin, chili, chaat masala, and black salt in a small bowl; drizzle over and toss gently.
  • Add green chutney and tamarind chutney; fold. Taste and adjust salt, tang, and heat.
  • Plate in shallow bowls or a platter. Top with pomegranate arils and sev at the last moment. Pass lemon wedges and extra chaat masala.

Notes

  • Soaking is in addition to prep_time; plan 2 to 3 hours (or quick-soak 45 to 60 minutes).
  • Warm dal turns mushy when tossed; cooling is essential.
    Shortcut: bagged fried chana dal is crunch-forward and often pre-salted; season the lemon mix after tasting the snack.
  • For Jain: omit onion and garlic-based chutneys; use Jain-labeled packaged chutneys if needed.
  • Gluten free: verify sev and chaat masala labels; some brands contain wheat.
  • Leftovers best within one day after mixing; store plain cooked dal up to 2 days and assemble fresh.
