Equipment

  • Food processor
  • Large mixing bowl

Ingredients

  • 1 1/2 cups rolled oats old-fashioned; quick oats work but give a softer texture
  • 1 cup creamy peanut butter natural, well-stirred; no-stir variety also works
  • 10-12 Medjool dates, pitted about 1 cup; soak in warm water 10 min if dry
  • 1/4 cup mini chocolate chips dark chocolate preferred
  • 1 teaspoon vanilla extract
  • pinch sea salt

Optional Mix-Ins

  • 2 tablespoons ground flaxseed optional; boosts fiber and omega-3s
  • 2 tablespoons unsweetened shredded coconut optional
  • 2 tablespoons sesame seeds optional; toasted adds extra flavor
  • 1/4 teaspoon cardamom powder optional; for a desi twist

Instructions

  • Blend the pitted dates in a food processor until they form a smooth, sticky paste, about 30 to 45 seconds. If the dates are dry or firm, add 1 tablespoon of warm water before blending.
  • In a large mixing bowl, combine the oats, peanut butter, date paste, vanilla extract, and sea salt. Stir until a thick, slightly sticky dough forms. Fold in the chocolate chips and any optional mix-ins.
  • Cover the bowl and refrigerate for 20 minutes. This makes the dough easier to roll and helps the balls hold their shape.
  • Scoop about 1 tablespoon of dough and roll firmly between your palms into a smooth ball. Place on a parchment-lined tray. Repeat to make 18 to 22 balls.
  • Refrigerate for another 20 to 30 minutes until firm. Transfer to an airtight container to store.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
If the dough is too dry, add peanut butter one tablespoon at a time until it holds together when pressed.
For a nut-free version, substitute sunflower seed butter for the peanut butter.
Use certified gluten-free oats to make this recipe completely gluten-free.
Dates can be swapped for 3 to 4 tablespoons of honey or pure maple syrup if unavailable.
