Dal Dhokli (Gujarati Dal with Wheat Dumplings)

Ingredients
  

For the dal

  • 1 cup tuvar dal split pigeon peas; picked over and rinsed
  • 3 cups water for pressure cooking or 3½ cups if simmering open longer
  • 1 medium tomato chopped fine, or 2 tbsp tomato paste
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ to 1 tsp red chili powder optional
  • 1 tsp grated jaggery or ½ tsp sugar optional, balances tang
  • Salt to taste
  • 2½ to 3 cups hot water later for thinning the cooked dal keep extra ready

For the first tempering

  • 2 tbsp oil or ghee
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • ¼ tsp fenugreek seeds methi; optional but classic
  • 1 pinch asafoetida hing
  • 6 to 8 fresh curry leaves
  • 1 small dry red chili optional; broken

For the dhokli dough

  • 1 cup whole wheat flour atta
  • ½ tsp salt
  • ¼ tsp turmeric powder for color
  • ½ tsp carom seeds ajwain
  • 1 tbsp neutral oil
  • About ⅓ to ½ cup water, added slowly

For the second tempering (optional finish)

  • 1 tbsp ghee or oil
  • ½ tsp cumin seeds
  • 2 tbsp raw peanuts optional
  • 2 tbsp fresh grated coconut optional
  • Lemon wedges and chopped cilantro for serving

Instructions
 

Cook the dal

  • Heat oil or ghee in a pressure cooker or heavy pot. When mustard seeds pop, add cumin, optional methi seeds, hing, curry leaves, and optional dry red chili.
  • Cook tomato until soft, 3 to 4 minutes. Add rinsed tuvar dal, turmeric, coriander powder, optional red chili powder, salt, and 3 cups water. Pressure cook for 3 whistles on medium heat and natural release, or simmer covered until dal mashes easily, 35 to 45 minutes.
  • Mash lightly with a spoon or pulse briefly with an immersion blender if you want a smoother base. Thin with hot water until noticeably soupier than you want the final dish (dhokli absorbs liquid). Stir in optional jaggery or sugar. Taste salt and tang; add a squeeze of lemon if you want a brighter base.

Make and cut the dhokli

  • Rub oil into atta, salt, turmeric, and ajwain until crumbly. Add water a tablespoon at a time and knead 4 to 5 minutes into a smooth, firm dough. Rest covered 10 to 15 minutes.
  • Divide into three portions. Roll each on a lightly floured board to about 2 mm thickness. Cut into diamonds or squares; dust between layers so pieces do not stick.

Simmer dhokli in the dal

  • Bring thinned dal to a gentle boil in a wide pot. Drop dhokli in batches, stirring gently after each so nothing clumps on the bottom.
  • Cover partly and simmer on low 18 to 25 minutes, stirring occasionally with a flat spoon. Add hot water in small splashes if the pot thickens too fast. Dhokli is done when swollen, edges look soft, and a piece has no raw flour in the center.
  • Optional second tadka: heat ghee or oil, sizzle cumin, fry peanuts until golden, add coconut for a few seconds, pour over the dal dhokli. Garnish with cilantro and lemon. Serve hot.

Notes

Texture: if the dal is already thick like gravy before dhokli goes in, the bowl can turn gluey. Err thin, then tighten at the end if needed.
Leftovers: refrigerate up to 3 days in an airtight container. Reheat with a splash of water and a fresh squeeze of lemon; adjust salt.
Vegan: use oil only; skip ghee in finishing tadka or use plant butter.
Instant Pot: sauté tadka and tomato, pressure cook dal on High with natural release, then use Sauté on Low for the dhokli simmer and stir often so the bottom does not scorch.
Make-ahead: cook and chill the dal base only; reheat very loose, bring to a gentle boil, then add freshly rolled dhokli.
