Dhilo Mohanthal (Loose Gujarati Besan Mohanthal)

Soft, grainy, scoopable dhilo mohanthal with the classic dhabo devo soak, ghee-roasted coarse besan, and a warm 1-string sugar syrup. Optional mawa for a festive, mithai-shop richness. No tray, no cutting.

Ingredients
  

For the dhabo devo soak

  • 1 cup coarse besan ladoo besan / mota besan; sifted if very dusty
  • 2 tbsp ghee
  • 2 tbsp whole milk warmed

For roasting

  • 1/2 cup ghee use the same kadai; add more only if the mixture looks dry

For the 1-string sugar syrup

  • 3/4 cup granulated white sugar
  • 1/2 cup water
  • 12 to 15 saffron strands bloomed in 1 tbsp warm milk
  • 1/2 tsp green cardamom powder
  • 1/4 tsp freshly grated nutmeg or scant 1/4 tsp ground
  • 1/8 tsp ground mace javitri; or a tiny pinch crumbled from whole blade

To finish

  • 1/4 cup whole milk warmed, for streaming in off the heat

Festive optional

  • 1/2 cup grated mawa khoya; for the mawa version

Garnish

  • 2 tbsp pistachios chopped
  • 2 tbsp almonds chopped

Instructions
 

Dhabo devo soak

  • Warm the 2 tbsp ghee with the 2 tbsp milk until just steaming. Drizzle over the besan in a wide bowl.
  • Rub the mixture briskly between your palms for about 2 minutes until it resembles damp sand. Cover with a clean kitchen towel and rest 15 minutes at room temperature.
  • Pass through a coarse sieve, pressing gently, to break up any lumps. Discard any hard bits left in the sieve.

Sugar syrup (1-string)

  • In a small saucepan, combine the sugar and water. Simmer on medium heat until the syrup reaches 1-string consistency (see notes). Stir in the saffron milk, cardamom, nutmeg, and mace. Keep the syrup barely warm on the lowest flame while you roast the besan.

Roast the besan

  • In a heavy kadai, melt the 1/2 cup ghee on low heat. Add the soaked, sieved besan.
  • Cook on low heat, stirring constantly, 12 to 15 minutes total, until the color is deep amber-gold and the aroma is deeply nutty. Do not rush; scorched besan tastes bitter.

Optional mawa (festive)

  • If using mawa, crumble it in and stir 2 minutes on low until it melts into the roasted besan.

Finish loose

  • Off the heat, add the 1/4 cup warm milk a few tablespoons at a time, stirring well after each addition. The mixture should look a little loose.
  • Still off the heat, pour in the warm syrup in a thin stream while stirring constantly. It will bubble, then thicken slightly. Stop the moment it starts to come together in a glossy, scoopable mass. Overcooking makes set barfi.

Serve

  • Spoon into small bowls or clay katoris while warm. Top with chopped pistachios and almonds.

Notes

Thumb-finger test for 1-string syrup - cool a drop on a spoon 5 seconds, pinch between thumb and forefinger, and pull apart gently. One thin thread should hold about 2 seconds. Two threads means the syrup is too tight and the sweet may set hard.
Hot rhythm - keep the syrup warm, the besan pan hot, and add syrup off the flame so nothing seizes into a rock-hard lump.
Ladoo besan (coarse) gives the signature grain; fine besan works but reads closer to besan halwa.
Storage - room temperature in an airtight container up to 4 to 5 days; it firms slowly. Microwave a portion 10 to 15 seconds with a few drops of milk, or warm gently on low with a splash of milk, to loosen. Refrigerate up to 2 weeks if needed; always reheat before serving. Freezing is not recommended.
Vegan swap - neutral coconut oil for ghee and cashew milk for dairy; skip mawa. Flavor shifts but the method still works.
