Creamy, cooling boondi raita made in 10 minutes with plain boondi, spiced yogurt, and a handful of pantry spices. Naturally gluten-free and perfect alongside biryani, pulao, or paratha.
Place the boondi in a bowl of cold water and soak for 5 minutes. This keeps the boondi soft but intact — soaking longer makes them mushy.
Drain the boondi and gently squeeze out excess water between your palms. Set aside.
Whisk the Curd
In a mixing bowl, whisk the chilled yogurt until smooth and lump-free.
Add 3–4 tablespoons of cold water and whisk to a pourable consistency, similar to thick lassi.
Add roasted cumin powder, chaat masala, black salt, red chili powder, and regular salt. Whisk to combine. Taste and adjust seasoning.
Mix and Serve
Fold in the soaked, drained boondi. Stir gently so the boondi doesn't break.
Transfer to a serving bowl. Refrigerate for 5 minutes or serve immediately.
Garnish with fresh coriander, a pinch of red chili powder, and a dusting of cumin powder.

For crunchy boondi: skip soaking and stir dry boondi directly into the yogurt. Serve within 10–15 minutes before it softens.Use full-fat yogurt for the creamiest result. If the curd is too thick, thin with cold water; if too thin, drain through muslin for 20 minutes.Black salt (kala namak) is key for the authentic tangy depth — do not substitute with regular salt alone.Make-ahead tip: prepare the spiced yogurt base up to a few hours ahead and refrigerate.
