Easy Kalakand with Ricotta (30-Minute Shortcut)

Classic kalakand with whole-milk ricotta and condensed milk. Stovetop or Instant Pot Sauté. Cardamom, optional saffron, and a tested spatula set-test for moist, sliceable festival squares.

Ingredients
  

For the kalakand

  • 15 oz whole-milk ricotta cheese 425 g; cold from the fridge is fine
  • 1 can sweetened condensed milk 14 oz / 396 g
  • 3 tablespoons full-fat milk powder
  • 1 tablespoon ghee
  • 1/2 teaspoon ground cardamom
  • 1/8 teaspoon saffron threads optional; lightly crushed
  • 1 tablespoon warm milk optional; for blooming saffron
  • 1/4 teaspoon rose water alcohol-free rose water only; optional
  • Pinch fine sea salt, optional (balances sweetness)

For garnish

  • 2 tablespoons unsalted pistachios finely chopped
  • 1 teaspoon dried edible rose petals optional garnish only; lightly crushed

Instructions
 

Prep (both paths)

  • If using saffron, steep threads in 1 tablespoon warm milk 5 minutes. Set aside.
  • In a bowl, whisk ricotta until mostly smooth. A few small grains are fine.
  • Line an 8×8 inch pan with parchment, leaving overhang on two sides.

Stovetop path (default)

  • Place a wide, heavy pan on medium heat. Add ricotta, condensed milk, milk powder, ghee, cardamom, saffron milk if using, rose water if using, and salt if using. Stir constantly until the mixture looks loose and glossy, about 2 minutes.
  • Reduce heat to low-medium. Cook, stirring often and scraping the pan bottom, until the mixture thickens noticeably, about 8 to 10 minutes. It will still look pourable.
  • Continue on low-medium, stirring continuously, until the mass pulls away from the sides and a spatula pressed flat on the surface lifts away clean with no wet streak, about 12 to 18 minutes more (22 to 28 minutes total cook after the first heat step).
  • Immediately scrape into the lined pan. Spread evenly with an offset spatula. Tap the pan once on the counter to release air pockets.
  • Sprinkle pistachios and rose petals on top while still warm. Press gently so they stick.
  • Cool on the counter 20 minutes, then refrigerate uncovered until firm enough to slice, at least 2 hours (3 hours for cleaner edges).
  • Lift out using parchment overhang. Wipe the knife clean between cuts. Cut into 18 squares.

Instant Pot path (6-quart or larger; Sauté only, no pressure)

  • Plug in the Instant Pot. Press Sauté and adjust to Less (or Low). When the display shows HOT, add ghee and let it melt about 30 seconds.
  • Add ricotta, condensed milk, milk powder, cardamom, saffron milk if using, rose water if using, and salt if using. Stir until glossy, about 2 minutes. Scrape any bits stuck on the bottom.
  • Stay on Sauté Less. Cook, stirring often and scraping the pot bottom every minute, until the mixture thickens noticeably, about 10 to 12 minutes. It will still look pourable. If it sputters or browns too fast, press Cancel, stir 15 seconds, then resume Sauté on Low.
  • Continue on Sauté Less, stirring continuously, until the mass pulls away from the pot sides and passes the same spatula set test as the stovetop path, about 8 to 12 minutes more (18 to 24 minutes total sauté after adding ingredients).
  • Press Cancel. Immediately scrape into the lined pan from prep. Follow the stovetop path to spread, garnish, chill, and slice.

Notes

Taste a tiny cooled dab on a spoon midway through the thicken stage if you want to check sweetness before the long cook. This version uses a standard 14 oz can as tested.
Instant Pot: keep the vent on Venting for the entire Sauté cook. Do not seal the lid for Pressure Cook on this recipe.
Do not substitute part-skim ricotta without expecting a longer cook or slightly softer set.
Store in an airtight container in the refrigerator up to 4 days. Bring to room temperature 10 minutes before serving for the best texture.
For gifting, place squares in mini cupcake liners so edges do not stick together.
For from-scratch milk kalakand without ricotta, make Classic Kalakand instead. For paan and gulkand flavors, make Paan Kalakand (Ricotta Shortcut).
If the slab weeps a little whey in the fridge, blot with paper towel and consume within 3 days.
