Equipment

  • Deep pan or kadai (for frying)
  • Air fryer (optional)

Ingredients

For the Aloo Matar Filling

  • 3 medium potatoes about 2 cups; boiled and roughly mashed
  • 1/2 cup frozen peas thawed
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon grated ginger
  • 1 green chili adjust to taste; finely chopped
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon amchur dry mango powder
  • 1/4 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons fresh cilantro chopped

For Assembling

  • 1 pack samosa patti / frozen samosa sheets about 20 to 25 sheets
  • 2 tablespoons all-purpose flour mixed with 2 tablespoons water sealing paste

For Frying

  • Oil for deep frying (about 2 to 3 cups)

Instructions

Make the Filling

  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter, about 30 seconds.
  • Add ginger and green chili and cook for 1 minute until fragrant.
  • Add mashed potatoes and peas. Mix well.
  • Add coriander powder, cumin powder, amchur, garam masala, and salt. Stir and cook for 2 to 3 minutes until spices coat the potatoes evenly.
  • Take off the heat. Stir in fresh cilantro. Let filling cool completely before assembling.

Fold the Samosas

  • Mix 2 tablespoons flour with 2 tablespoons water to make a thick sealing paste.
  • Take one samosa sheet and fold it in half lengthwise to make a double-layered strip.
  • Fold the top-right corner diagonally to the left edge to form a cone. Apply sealing paste along the seam and press firmly.
  • Fill the cone with 1.5 to 2 tablespoons of cooled filling. Do not overfill.
  • Fold the remaining strip over the opening, apply sealing paste, and press firmly to seal all edges.

Deep Fry

  • Heat oil in a deep pan to 160°C / 320°F (medium-hot, not smoking).
  • Fry 4 to 5 samosas at a time on medium-low heat for 8 to 10 minutes, turning occasionally, until deep golden and crispy.
  • Drain on a paper towel and serve immediately.

Air Fryer (alternative)

  • Preheat air fryer to 180°C / 360°F for 3 minutes. Brush samosas with oil on all sides.
  • Air fry in a single layer for 12 to 14 minutes, flipping once halfway, until golden and crispy.

Baked (alternative)

  • Preheat oven to 200°C / 400°F. Brush samosas generously with oil on all sides.
  • Bake on a lined tray for 20 to 25 minutes, flipping once at the 12-minute mark, until golden and crisp.

Notes

Thaw frozen samosa sheets for 25 to 30 minutes at room temperature before using. Keep covered with a damp towel while folding.
Cool the filling completely before assembling. Hot filling softens the sheets and breaks the seal.
Amchur (dry mango powder) gives the filling its tangy note. Substitute with a small squeeze of lemon juice added at the end.
Make ahead: fill and fold the full batch, freeze in a single layer until solid, bag and freeze for up to 3 months. Cook directly from frozen, adding 2 to 3 extra minutes.
Store cooked samosas in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 180°C for 4 to 5 minutes.
