Ingredients

For the Biscuit Crust

  • 250 g digestive biscuits or Marie biscuits; crushed to fine crumbs
  • 100 g unsalted butter melted

For the Cheesecake Filling

  • 500 g full-fat cream cheese softened to room temperature
  • 300 ml heavy whipping cream cold
  • 100 g good-quality white chocolate melted and slightly cooled
  • 80 g powdered sugar adjust to taste
  • 1 tsp rose water
  • ½ tsp ground cardamom elaichi
  • 1 pinch saffron strands soaked in 2 tbsp warm milk for 10 minutes
  • 1 tsp vanilla extract

For Layering & Garnish

  • 12 to 15 medium gulab jamun store-bought recommended; drained and patted dry
  • 2 tbsp gulab jamun syrup optional, for drizzling
  • 2 tbsp pistachios slivered
  • few saffron strands and edible rose petals (optional)

Instructions

Prep the Gulab Jamun

  • Drain gulab jamun from the tin and reserve 2 tablespoons of syrup if using.
  • Pat each jamun dry with paper towels. Halve any large ones so layers stay even.

Make the Crust

  • Line a 7-inch springform pan with parchment on the bottom.
  • Mix biscuit crumbs with melted butter until sandy and clumping when pressed.
  • Press firmly into the pan base. Chill 20 minutes while you make the filling.

Make the Filling

  • Beat softened cream cheese with powdered sugar until smooth and no lumps remain.
  • Stir in rose water, cardamom, saffron milk, and vanilla.
  • Fold in melted white chocolate until fully combined.
  • In a separate bowl, whip cold heavy cream to stiff peaks.
  • Gently fold whipped cream into the cream cheese mixture in two additions. Do not deflate.

Assemble & Set

  • Spread one-third of the filling over the chilled crust.
  • Arrange halved gulab jamun cut-side down, leaving a small gap between pieces.
  • Spoon remaining filling over the jamun and smooth the top with an offset spatula.
  • Cover loosely with plastic wrap (avoid touching the surface) and refrigerate at least 6 hours, preferably overnight.

Garnish & Serve

  • Run a thin knife around the pan edge before releasing the springform.
  • Drizzle reserved syrup if desired. Top with pistachios, saffron, and rose petals.
  • Slice with a sharp knife wiped clean between cuts. Serve chilled.

Notes

Room-temperature cream cheese is non-negotiable. Cold blocks leave lumps that never smooth out.
White chocolate sets the filling without gelatin, keeping the recipe vegetarian. Use a couverture-style bar, not candy melts.
For individual jars, layer crumbs, filling, and quartered jamun in small glasses. Chill 4 hours minimum.
Make-ahead timeline, make the crust and fill on Day 1 evening; garnish and slice on Day 2 before guests arrive.
Store covered in the refrigerator up to 3 days. Not ideal for freezing once assembled.
Kid-friendly note, the jamun pieces are soft; cut small slices for little ones and skip extra syrup drizzle.
