Ingredients
  

Nuts and seeds

  • 1 cup raw almonds badam
  • 3/4 cup raw cashew halves or pieces kaju
  • 1/2 cup raw pistachio kernels pista
  • 1/2 cup walnut halves roughly broken
  • 1/4 cup pumpkin seeds optional

Dried fruit

  • 1/2 cup golden raisins kishmish
  • 1/3 cup soft dates khajur, pitted and chopped
  • 2 tablespoons dried apricots or cranberries chopped, optional, for color

Spice finish and light glaze

  • 1 tablespoon ghee or neutral oil coconut oil works for vegan
  • 3/4 teaspoon cardamom powder elaichi
  • pinch fine salt about 1/8 teaspoon, plus more to taste
  • 1 to 2 teaspoons honey or thin jaggery syrup for light glaze
  • 1 tablespoon dried rose petals lightly crushed, optional
  • 6 to 8 saffron strands crumbled, optional

Instructions
 

Roast the nuts

  • Preheat the oven to 325°F (160°C). Line a baking sheet if you like for easier cleanup.
  • Spread almonds, cashews, and walnuts in a single layer. Roast 6 minutes.
  • Add pistachios and optional pumpkin seeds. Roast 4 to 6 minutes more, until the almonds smell nutty and look a shade deeper. Do not wait for dark brown spots.
  • Transfer nuts and seeds to a wide mixing bowl so they stop cooking on the hot tray.

Spice finish and light glaze

  • While the nuts are still warm (not scorching), melt the ghee or warm the oil in a small pan. Stir in cardamom, salt, optional rose petals, and optional saffron. Pour over the nuts and toss until every piece looks lightly coated and fragrant.
  • Drizzle 1 to 2 teaspoons warm honey or thin jaggery syrup over the nuts. Toss quickly so the glaze coats lightly. Spread back on the baking sheet in a single layer to cool so pieces do not clump.
  • Taste one cooled nut. Add a tiny pinch more salt or cardamom if needed.

Add fruit and jar

  • Let the glazed nuts cool completely to room temperature, about 20 to 30 minutes. They should feel dry-glossy, not warm or sticky-wet.
  • Fold in raisins, chopped dates, and optional apricots or cranberries. Toss gently so the fruit distributes without crushing.
  • Portion into clean, completely dry jars. Seal only when the mix is cool. Tie with ribbon for gifting, or keep one jar by the chai tray.

Notes

Stovetop option: dry-roast almonds, cashews, and walnuts in a wide pan over medium-low heat 6 to 8 minutes, stirring often. Add pistachios and seeds for 2 to 3 minutes more. Off heat, toss with spice finish and thin honey glaze, cool fully on a tray, then fold in fruit.
Gift yield: this batch fills about two 16 oz (500 ml) jars, or four smaller 8 oz jars.
Vegan: use oil or coconut oil instead of ghee; use maple or thin date syrup instead of honey.
Make-ahead: roast and jar up to 2 weeks ahead in a cool, dry cupboard away from sunlight.
Soft dates work best; very dry dates can be chopped finer or swapped for more raisins.
Storage: airtight jar at room temperature 1 to 2 weeks. In humid kitchens, refrigerate and bring to room temp before serving.
