Hakka-Style Protein Pasta (Hakka Noodles Inspired Pasta)
High-protein lentil or chickpea spaghetti stir-fried with cabbage, bell pepper, and tofu or paneer in a soy-chili garlic sauce. Lunchbox-friendly Indo-Chinese fusion ready in 30 minutes.

Cook the protein pasta
Bring a large pot of salted water to a rolling boil.
Add lentil or chickpea spaghetti and cook 1 minute less than the package time for al dente. Taste early; protein pasta can go mushy quickly.
Drain thoroughly. Do not rinse. Toss immediately with a drizzle of oil so strands stay separate. Set aside.
Stir-fry the vegetables
Heat 1 tablespoon oil in a wide skillet or wok over medium-high heat.
Add minced garlic and grated ginger. Sauté 30 seconds until fragrant.
Add sliced onion. Cook 2 to 3 minutes until softened and lightly golden.
Add shredded cabbage, julienned carrot, bell pepper, and green beans or snap peas if using. Stir-fry on high heat for 3 to 4 minutes until tender-crisp.
Add protein and sauce
Push vegetables to one side. Add cubed tofu or paneer and let sear 1 to 2 minutes until lightly golden on one side.
Whisk together soy sauce, rice vinegar, chili garlic sauce, black pepper, and a pinch of salt in a small bowl.
Pour sauce over the pan. Toss 30 seconds until vegetables and protein are glossy.
Toss and finish
Add cooked spaghetti to the pan. Toss on medium heat for 2 to 3 minutes until every strand is coated and the pan looks lightly saucy, not wet.
Taste and adjust salt or chili heat. Garnish with chopped scallions.
Serve hot, or cool on a plate 5 minutes before packing for lunch.
Notes
For kids, start with 1 tablespoon chili garlic sauce and add more at the table.Use tamari instead of soy sauce for a gluten-free version.Paneer adds a richer bite; tofu keeps this fully vegan.Refrigerate in an airtight container up to 3 days. Reheat in a skillet with a drop of oil, or pack straight from the fridge for lunch.For a drier lunchbox texture, drain pasta very well and keep the sauce quantity at the lower end.
