Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package directions.
Before draining, reserve 1 cup of starchy pasta water. Drain the pasta and return it to the pot off the heat.
Make the Hariyali Sauce
Add spinach, cilantro, mint, yogurt, 1/2 cup cubed paneer, garlic, ginger, green chilli (if using), lemon juice, cumin, salt, and oil to a blender.
Blend until completely smooth, scraping down the sides once or twice. The sauce should be pourable but thick. Taste and adjust salt or lemon as needed.
If the sauce is too thick, add 1-2 tablespoons of pasta water and blend again.
Toss and Serve
Pour the hariyali sauce over the warm pasta and toss until every piece is coated. Add reserved pasta water a tablespoon at a time if the sauce needs loosening.
Gently fold in the remaining 1/2 cup paneer cubes so they stay intact.
Serve immediately, garnished with fresh mint, a crack of black pepper, and lemon wedges on the side.
Notes
Use extra-firm tofu for a vegan version; blend silken tofu with the herbs instead of paneer and yogurt, and use coconut yogurt for tang.Thaw and squeeze frozen spinach dry before blending. Fresh herbs are still best for brightness.Blend the sauce up to 2 days ahead and store in an airtight container in the fridge. Toss with freshly cooked pasta when ready.Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently with a splash of water or pasta water to loosen the sauce.
