High-Protein Jowar Tostadas with Smoky Chipotle Paneer Spread

Crisp gluten-free jowar roti or bhakri shells topped with smoky paneer and hung curd spread and a chunky tomato-corn relish. Built for leftover millet flatbreads.

Ingredients
  

For the crisp jowar shells

  • 4 small jowar rotis or bhakri rounds about 15 to 18 cm / 6 to 7 inches
  • 2 to 3 teaspoons ghee for brushing

For the tomato and corn relish

  • 3 medium ripe tomatoes about 450 g; halved
  • 4 garlic cloves smashed
  • 1 teaspoon mustard oil
  • fine salt, to taste
  • 3/4 cup cooked sweet corn kernels
  • 1/2 cup finely chopped red onion
  • 1/2 cup combined finely diced red and green bell pepper
  • 1 to 2 green chilies optional; minced
  • 2 tablespoons chopped coriander
  • 1 teaspoon dried mixed herbs or 1/2 teaspoon crushed kasuri methi optional
  • 1 to 2 tablespoons fresh lime juice
  • red chili flakes, to taste

For the smoky chipotle paneer spread

  • 1 medium bell pepper any color
  • 3 garlic cloves
  • 1 mild to medium fresh red chili
  • 3 to 4 dried Kashmiri red chilies soaked in hot water 15 minutes until soft
  • 100 g paneer crumbled
  • 1/2 cup hung curd thick strained yogurt
  • optional 1/2 teaspoon minced chipotle in adobo or 1/2 to 1 teaspoon smoked paprika if omitting chipotle
  • 2 to 4 tablespoons water as needed
  • salt and black pepper, to taste

Instructions
 

Make the crisp jowar shells

  • Heat a wide skillet or tawa on low to medium-low. Brush a thin film of ghee on both sides of each jowar round. Cook in batches, flipping often, until crisp and deeply golden with a dry crackle when tapped. Transfer to a wire rack so steam does not soften the underside. Cool completely before storing.

Make the tomato and corn relish

  • Warm mustard oil in a skillet until it just shimmers (not smoking). Place tomatoes cut side down with smashed garlic. Sprinkle salt, cover, and cook on low until skins blister and flesh softens. Cool, peel if needed, chop roughly.
  • Combine cooked tomato with corn, onion, bell peppers, and minced green chili to taste. Finish with lime juice, coriander, optional dried herbs or kasuri methi, chili flakes, and salt. Stir gently; keep chunky.

Make the smoky chipotle paneer spread

  • Char bell pepper, garlic cloves, and fresh red chili over an open flame or under a broiler until blistered. Steam pepper covered, then peel most of the skin. Remove chili stems and seeds for milder heat if needed.
  • Blend roasted vegetables with soaked Kashmiri chilies, paneer, hung curd, optional chipotle or smoked paprika, and water until smooth and spreadable. Season with salt and black pepper. Taste for smoke, tang, and mild heat.

Assemble

  • Spread paneer mixture on each crisp jowar round. Top with relish. Garnish with coriander or extra lime if the relish mellowed in the fridge.

Notes

  • Leftover roti crisps faster than fresh; keep heat gentle so ghee does not burn.
  • Vegan: swap paneer for pressed firm tofu and hung curd for thick coconut or unsweetened vegan yogurt; adjust salt.
  • Store spread and relish airtight up to two days; crisp shells the same day you serve for the best crunch.
  • For milder spread, omit fresh red chili and reduce soaked Kashmiri chilies.
