Homemade Choco Bar Ice Cream (Nut Free, Eggless)

Soft vanilla ice cream bars on sticks with a crackly dark chocolate shell. Nut free throughout with no nuts, nut oils, or nut garnish. No ice cream machine required.

  • Tall narrow glass for dipping

Ingredients
  

For the ice cream base

  • 500 ml whole milk or use evaporated milk shortcut in notes
  • 1 tablespoon milk powder
  • 1/3 cup granulated sugar up to 1/2 cup for darker chocolate dip; use 1/3 cup if dipping with milk chocolate
  • 360 ml heavy cream 1 1/2 cups, chilled, at least 35% fat
  • 1 teaspoon pure vanilla extract
  • 1 pinch ground cardamom optional

For the nut-free chocolate shell

  • 350 g dark chocolate 60 to 70% cocoa, chopped
  • 4 tablespoons neutral oil avocado, refined sunflower, or refined coconut oil

Instructions
 

Reduce the milk (or use shortcut)

  • Pour milk into a medium saucepan. Bring to a boil over medium-high heat, stirring often, about 4 to 5 minutes.
  • Lower heat to low. Simmer 10 minutes, stirring occasionally.
  • Mix milk powder with a spoonful of hot milk from the pan until smooth; stir back into the pan. Simmer 5 more minutes.
  • Add sugar; stir until dissolved. Simmer 3 to 5 minutes more until reduced to about 250 ml (roughly half). Milk should coat a spoon lightly.
  • Remove from heat. Cool to room temperature, or speed up in a shallow bowl over an ice bath.

Mix the ice cream base

  • Beat chilled heavy cream in a large bowl on medium speed about 1 minute, just to loosen, no stiff peaks.
  • Pour in cooled reduced milk (or 250 ml room-temperature evaporated milk). Add vanilla and cardamom if using.
  • Beat on medium 2 minutes until thick, pourable, and creamy like melted soft serve.

Freeze in molds

  • Pour into bar molds. Insert sticks (use foil slits if your mold needs them).
  • Freeze at least 24 hours until solid. Do not rush; this base freezes slower than condensed-milk-only mixes.

Make the nut-free magic shell

  • Line a baking sheet with parchment.
  • Melt chocolate and oil in a heatproof bowl over simmering water until smooth. Remove from heat.
  • Cool until barely warm, not hot on your finger. Pour into a tall glass.

Dip the bars (one at a time)

  • Keep undipped bars in the freezer. Pull one bar out; loosen with a thin knife along the mold if needed.
  • Dip fully into chocolate. Lift, let excess drip 10 to 15 seconds, then hold the stick until the shell sets.
  • Place on parchment. Repeat, returning the tray to the freezer between bars if your kitchen is warm.
  • Freeze dipped bars at least 1 hour until the shell is firm. Store in an airtight container up to 2 weeks.

Notes

Nut free: Do not add chopped nuts, nut butters, or nut oils. Keep nut-based snacks away from the dipping station to avoid cross-contact.
Evaporated milk shortcut: Skip reducing milk; use 250 ml (1 cup) canned evaporated milk at room temperature. Reduce sugar slightly if the brand is sweet.
Cream fat: Use heavy cream labeled 35% fat or higher for the creamiest bar.
Chocolate too warm: Cool longer before dipping or the shell will be thin and patchy.
Serving: Bars soften fast in humid heat. Dip in small batches and refreeze the rest.
Freeze time: Allow 24 hours for the base in molds before dipping; plan ahead for playdates and parties.
