Kaddu ki Sabzi (Easy Pumpkin Sabzi)

Ingredients
  

Pumpkin

  • 500 g pumpkin kaddu; about 4 heaped cups; peeled, seeded, and cut into 3/4-inch cubes

Oil and tempering

  • 2 tbsp oil peanut or neutral
  • 1 tsp cumin seeds
  • 1/4 tsp asafoetida hing; optional if strictly sattvik or fasting
  • 1 small onion optional; skip for no-onion version; finely chopped
  • 1 tbsp ginger paste use 1/2 tbsp if sensitive to heat
  • 1 to 2 green chilies optional; skip for kids; slit

Spices

  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder adjust to taste
  • 1/2 tsp Kashmiri red chili powder optional, for color
  • Salt to taste

Balance and finish

  • 1/2 tsp amchur dry mango powder; or 1 tbsp lemon juice at the end
  • 1/2 to 1 tsp grated jaggery or 1/4 tsp sugar optional, only if pumpkin is very tart
  • 1/4 tsp garam masala
  • 1 tsp kasuri methi dry fenugreek leaves; optional; crushed between palms
  • 2 tbsp fresh coriander leaves chopped

Instructions
 

Prep the pumpkin

  • Peel the pumpkin and scoop out seeds and stringy bits. Cut into even 3/4-inch cubes so they cook at the same rate.

Tempering

  • Heat oil in a wide pan or kadhai on medium heat. Add cumin seeds; let sizzle a few seconds. Add asafoetida if using.
  • If using onion, sauté until soft and lightly golden, 4 to 5 minutes.

Aromatics

  • Add ginger paste and green chilies. Stir about 30 seconds until fragrant.

Cook the pumpkin

  • Add pumpkin cubes. Add turmeric, coriander powder, red chili powder, Kashmiri chili if using, and salt. Stir gently to coat. The pan will look dry at first; that is expected.

Covered cook

  • Cover and reduce heat to low-medium. Cook 12 to 18 minutes, stirring once or twice, until fork-tender. Do not add water unless the pan scorches; pumpkin releases moisture. If needed, add only 1 to 2 tbsp water.

Finish

  • Uncover. If water pools, cook on medium 2 to 4 minutes, stirring gently, until moisture reduces and oil clings to the pieces again.
  • Off heat, add amchur or lemon juice, garam masala, and crushed kasuri methi if using. Taste; balance with salt, lemon, or a pinch of jaggery or sugar. Garnish with coriander.

Notes

Texture: Avoid extra water; too much liquid makes mushy kaddu.
No onion garlic: Skip onion; use hing and ginger only, or ginger alone for stricter sattvik.
Khatta meetha: Use both amchur and a little jaggery, plus Kashmiri chili for a mild sweet-sour profile.
Vrat: Use rock salt if required, skip hing and onion, and follow your family's fasting rules for spices.
Storage: Refrigerate in an airtight container up to 3 days. Reheat in a pan on low with a splash of water if needed. Freezing not recommended; thawed pumpkin is often watery.
