Kesar Pista Shortbread Cookies (Eggless Saffron Pistachio Shortbread)

Ingredients
  

For the saffron milk

  • 15 to 18 saffron strands
  • 2 tablespoons (30 ml) warm whole milk
  • ½ teaspoon rose water (optional)

For the cookie dough

  • 1 cup (227 g) unsalted butter, softened
  • ½ cup plus 2 tablespoons (100 g) powdered sugar (or powdered jaggery)
  • 1½ cups (180 g) all-purpose flour (maida)
  • ¼ cup (30 g) unsalted pistachios, pulsed to coarse meal
  • 2 tablespoons pistachio slivers, plus extra for garnish
  • 1 tablespoon dried edible rose petals, lightly crushed
  • ½ teaspoon ground cardamom
  • ¼ teaspoon fine salt

Optional garnish

  • ¼ cup (45 g) white chocolate chips or chopped white chocolate
  • Extra crushed pistachios and rose petals

Instructions
 

Bloom the saffron

  • Steep saffron strands in warm milk 20 to 30 minutes until the milk turns deep yellow. Stir in rose water if using. Set aside.

Make the dough

  • Beat softened butter and powdered sugar until pale and fluffy, about 2 minutes. Scrape the bowl.
  • Pour in saffron milk including the threads. Beat 30 seconds until evenly tinted.
  • Add flour, coarse pistachio meal, cardamom, salt, and half the pistachio slivers. Mix on low until the dough just comes together. It will look crumbly.
  • Tip onto a clean surface and gently knead 4 to 5 turns until smooth. Fold in rose petals without overworking.

Chill and shape

  • Divide dough in half. Roll each half into a tight log about 8 inches long and 1½ inches wide. Wrap tightly in parchment or plastic wrap.
  • Refrigerate at least 45 minutes, or freeze up to 1 month. If frozen, thaw in the fridge 20 minutes before slicing.

Slice and bake

  • Preheat oven to 350°F (180°C). Line two baking sheets with parchment.
  • Slice logs about ¼ inch thick with a sharp knife. Rotate the log a quarter turn every few slices to keep rounds even.
  • Place slices 1 inch apart on prepared sheets. Press a few pistachio slivers onto the tops if you like.
  • Bake 12 to 14 minutes, swapping trays halfway, until edges are pale gold and centers look set but still light in color.
  • Cool on the sheet 2 minutes, then transfer to a rack to cool completely.

Optional white chocolate drizzle

  • Melt white chocolate in a microwave-safe bowl in 20-second bursts, stirring between, or over a double boiler until smooth.
  • Drizzle thin lines over cooled cookies. Sprinkle crushed pistachios and rose petals immediately. Let set 15 minutes before storing.

Notes

Half atta and half maida works for a nourishing swap. Full atta makes a denser cookie; do not exceed 50 percent whole wheat.
Powdered jaggery adds caramel notes but darkens the dough slightly. Sift if clumpy.
Rinse and dry salted pistachios before using, or the cookies may taste too salty.
If dough is too dry, add milk 1 teaspoon at a time until it holds together when squeezed.
If dough spreads on the tray, chill the log an extra 20 minutes before slicing.
Baked cookies keep in an airtight tin at room temperature up to 2 weeks. Dough logs freeze up to 1 month.
Contains pistachios; not suitable for nut-restricted lunchboxes.
