Kutchi Dabeli

Butter-toasted ladi pav stuffed with tangy masala potato, dry garlic chutney, peanuts, pomegranate, and sev. A Kutch-style Gujarati street snack for chai time.

Ingredients
  

Potato filling

  • 400 g potatoes boiled, peeled, mashed
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 8–10 curry leaves
  • 1 pinch hing asafoetida
  • 1 tsp ginger paste
  • 2–3 tbsp dabeli masala
  • 1/4 –1/2 tsp red chili powder optional
  • 1/4 tsp turmeric
  • 1–1.5 tbsp tamarind paste or pulp to taste
  • 1–1.5 tbsp grated jaggery
  • Salt to taste
  • Water only if needed, by the tablespoon

Assembly

  • 6 ladi pav or soft dinner rolls
  • 3–4 tbsp butter or neutral oil for vegan
  • 4–6 tbsp dry garlic chutney
  • 4–6 tbsp tamarind-date or sweet tamarind chutney
  • 2–3 tbsp green chutney optional
  • 1/2 cup roasted peanuts crushed
  • 1/2 cup pomegranate arils
  • 1/2 cup fine sev
  • Cilantro, chopped, for garnish

Instructions
 

Make the filling

  • Mash boiled potatoes until coarse-smooth; a few small lumps are fine.
  • Heat oil in a wide pan on medium heat. Temper mustard seeds; when they pop, add cumin, curry leaves, and hing. Cook until fragrant.
  • Add ginger paste; stir 20–30 seconds.
  • Add mashed potato, turmeric, dabeli masala, red chili powder if using, salt, tamarind, and jaggery. Mix well, breaking up lumps.
  • Cook 6–10 minutes, stirring often, until the mixture pulls away from the sides and looks glossy, not watery. Add water only one tablespoon at a time if it sticks; avoid a loose curry.
  • Taste and balance sour, sweet, and spice. Cool 10–15 minutes off the heat before stuffing.

Assemble and toast

  • Split each pav horizontally, ideally hinged on one long edge. Spread dry garlic chutney on both inner faces, then thin layers of sweet tamarind chutney and green chutney if using.
  • Add a generous spoon of filling; top with peanuts, pomegranate, cilantro, and sev. Close gently.
  • Melt butter on a hot tawa or skillet. Toast stuffed pav, pressing lightly with a spatula, until golden and crisp on both sides. Serve immediately.

Notes

Warm or wet filling steams soft pav and turns the snack soggy quickly; cool the masala until it is warm, not hot, before assembly.
If pav is very soft, toast open-faced briefly before closing so you get crunch without squeezing out the sev.
Filling keeps in an airtight container in the fridge up to 2 days; assemble and toast just before eating.
No ladi pav? Use mini burger buns or small dinner rolls with a soft crumb.
Dry garlic chutney is intense; start with a thin layer and add more after a taste test.
