Ingredients
  

For the Foxtail Millet Base

  • 1/2 cup foxtail millet (thinai / kangni) rinsed
  • 1 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon sugar or honey optional, for a gentle sweetness

For the Shrikhand Layer

  • 1 cup thick Greek yogurt or hung curd (chakka)
  • 1/2 cup ripe mango puree fresh or frozen, thawed
  • 2-3 tablespoons powdered sugar or honey to taste
  • 1/4 teaspoon green cardamom powder
  • pinch saffron strands bloomed in 1 tbsp warm milk; optional
  • 1/4 teaspoon rose water optional

For Assembly & Topping

  • 1/2 cup diced fresh mango
  • 2 tablespoons chopped pistachios
  • extra cardamom or saffron for garnish

Instructions
 

Cook the millet

  • Rinse foxtail millet under cold water until the water runs mostly clear.
  • Combine millet, water, salt, and sugar (if using) in a small saucepan. Bring to a boil.
  • Reduce heat to low, cover, and cook 15 to 18 minutes until the water is absorbed and grains are tender but still hold their shape.
  • Remove from heat. Keep covered 5 minutes, then fluff with a fork. Spread on a plate to cool slightly if assembling right away, or refrigerate for meal prep.

Make the shrikhand layer

  • If using saffron, steep the strands in warm milk for 5 minutes until the milk turns golden.
  • In a bowl, whisk yogurt until smooth. Beat in mango puree, sugar, and cardamom until creamy.
  • Stir in saffron milk and rose water if using. Taste and adjust sweetness. The mixture should be thick enough to spoon, not pour like lassi.

Assemble the bowls

  • Divide warm or chilled millet between two bowls.
  • Spoon shrikhand over the millet. Use a generous layer so every bite gets yogurt and grain together.
  • Top with diced mango and pistachios. Finish with a pinch of cardamom or a few saffron threads.

Serve

  • Warm millet with chilled shrikhand works well in cooler months.
  • Fully chilled bowls are refreshing for summer mornings.

Notes

Meal prep: cook 1 cup dry foxtail millet at the start of the week (yields about 2 cups cooked). Refrigerate up to 3 days. Make shrikhand up to 2 days ahead; store separately from millet.
If grains clump, you likely added too much water or stirred while cooking. Spread cooked millet on a plate to steam off excess moisture.
Store-bought shortcut: fold 3/4 cup store-bought mango shrikhand with 1/4 cup Greek yogurt, then spoon over millet.
Storage: keep millet and shrikhand separate in the refrigerator up to 3 days. Add fresh mango the day you eat. Combined bowls keep 1 day.
