Ingredients
  

For the overnight oats base

  • 1/2 cup ripe mango finely chopped or lightly mashed
  • 1/2 cup curd
  • 1/2 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1/4 tsp cardamom powder
  • 2 to 3 saffron strands crushed
  • 1 tsp chia seeds

For garnish

  • 1 tsp chopped pistachios
  • extra mango pieces (optional)

Instructions
 

Make the creamy base

  • In a bowl or jar, whisk curd and vanilla protein powder until smooth and lump-free.
  • Add mango, cardamom powder, and crushed saffron, then mix until creamy.

Assemble and chill

  • Stir in oats and chia seeds until evenly combined.
  • Cover and refrigerate for at least 4 hours or overnight.

Finish and serve

  • Stir before serving and loosen with 1 to 2 tbsp milk if needed.
  • Top with chopped pistachios and extra mango.

Notes

For a dairy-free version, use unsweetened coconut or almond yogurt and plant-based vanilla protein powder.
Keep pistachios as a last-minute topping so they stay crunchy.
If using very sweet mango, no extra sweetener is needed.
Store in an airtight jar in the refrigerator for up to 2 days.
