Cook the chai-spiced millet
Rinse barnyard millet under cold water until the water runs mostly clear.
In a small saucepan, combine milk, water, cardamom pods, ginger, cinnamon, clove, pepper, and salt. Bring to a gentle simmer 2 to 3 minutes so the spices release their aroma.
Stir in the millet and honey or jaggery if using. Return to a simmer, then reduce heat to low.
Cook 10 to 12 minutes, stirring occasionally, until the millet is tender and the mixture looks creamy. Add a splash of water if it thickens before the grains soften.
Remove from heat. Discard the cinnamon stick and whole spices if you prefer. Rest covered 3 minutes. The millet will thicken as it sits.
Make the chai yogurt layer
Whisk yogurt until smooth. Beat in honey, cardamom, and ground ginger if using.
Thin with warm milk only if needed. The yogurt should be thick enough to spoon, not pour like lassi.
Assemble and serve
Divide warm millet between two bowls. Loosen with a little warm milk if it set up too firmly.
Spoon chai yogurt over the millet. Top with chopped almonds and a pinch of cardamom or cinnamon.
Serve warm or at room temperature. Pour an extra splash of warm milk around the edges if you want it more porridge-like.
