Masala Oats (Savory Indian Oatmeal)

Ingredients
  

For the tempering and masala

  • 1½ tbsp neutral oil or light olive oil or ghee if not vegan
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 tsp ginger finely chopped
  • 1–2 green chilies skip or reduce for kids; slit or finely chopped
  • 8–10 fresh curry leaves optional
  • 1 small onion about ½ cup; finely chopped
  • 1 medium tomato about ¾ cup; finely chopped , or ½ cup canned diced tomatoes
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder or paprika for color without heat
  • ½ tsp ground coriander
  • ¼ tsp garam masala optional
  • Salt to taste

For the oats

  • 1 cup rolled oats old-fashioned; or ¾ cup quick oats
  • 2 cups water or 1 cup water + 1 cup low-sodium vegetable broth
  • 2 tbsp fresh coriander cilantro; chopped, for finishing
  • 1 tsp lemon juice or lime juice optional

Optional add-ins

  • ¼ cup frozen peas
  • ¼ cup grated carrot
  • 1 cup spinach loosely packed, stirred in at the end until wilted

Instructions
 

Build the tadka and masala

  • Heat oil in a medium saucepan or deep skillet over medium heat. When the oil is warm, add mustard seeds and let them crackle, about 20–30 seconds. If they do not pop, wait until the oil is hot enough before continuing.
  • Add cumin seeds, ginger, green chili, and curry leaves. Stir for 30 seconds until fragrant.
  • Add onion and a pinch of salt. Cook, stirring often, until the onion is soft and lightly golden at the edges, 4–5 minutes.
  • Stir in tomato, turmeric, red chili powder, ground coriander, and garam masala if using. Cook until the tomato breaks down and the mixture looks jammy, 3–4 minutes. If it sticks, splash in a tablespoon of water.

Cook the oats

  • Add water (or water + broth) and bring to a gentle boil. Taste the liquid and adjust salt; it should taste slightly saltier than the finished dish.
  • Stir in rolled oats and any firm vegetables (peas, carrot). Reduce heat to low-medium so the mixture simmers gently. Avoid hard boiling, which makes oats mushy.
  • Cook uncovered, stirring often, until the oats are creamy and most of the liquid is absorbed, about 5–7 minutes for rolled oats (3–4 minutes for quick oats; check early).
  • If using spinach, fold it in and cook just until wilted, about 1 minute.
  • Turn off the heat. Stir in lemon or lime juice if using, and top with fresh coriander.

Notes

If the pot looks too thick before the oats are tender, add hot water in ¼ cup increments. It is easier to loosen masala oats than to rescue a dry, clumpy pan.
Quick oats need less time and slightly less liquid; reduce water by about ¼ cup and watch the pot.
Steel-cut oats need a different method (longer cook, more liquid); this recipe is for rolled or quick oats only.
For gluten-free diets, use certified gluten-free oats because of cross-contact risk with wheat.
Leftovers keep in an airtight container in the refrigerator for up to 2 days. Reheat with a splash of water or broth over medium heat until creamy again.
