Methi Ringan nu Shaak (Fenugreek Eggplant)

A simple Gujarati shaak with tender eggplant, fresh fenugreek leaves, and a warm spice tempering finished with jaggery and lemon. Pairs with roti, bajra roti, or dal.

Ingredients
  

For the shaak

  • 2 medium eggplants about 600 g / 1.3 lb total, cut into 1-inch cubes
  • 2 cups packed fresh methi leaves washed, chopped, and rinsed again, from about 2 small bunches
  • 3 tablespoons neutral oil
  • 1/4 teaspoon hing (asafoetida)
  • 1 teaspoon cumin seeds
  • 1-2 dried red chilies broken, or 1 slit green chili
  • 1 tablespoon ginger-garlic-green chili paste or 3 cloves garlic + 1/2 inch ginger + 1 green chili, minced
  • 1/2 teaspoon turmeric powder
  • 2 teaspoons dhana-jeeru (coriander-cumin powder)
  • 1/2 teaspoon red chili powder plus more to taste
  • 1 teaspoon grated jaggery or 1/2 teaspoon sugar
  • 1 teaspoon fine salt plus more to taste
  • 2 tablespoons water only if the pan looks dry
  • 1 tablespoon fresh lemon juice

Instructions
 

Prep the vegetables

  • Cut eggplant into 1-inch cubes. Wash methi in several changes of water, chop roughly, and rinse once more. Drain well.

Cook the shaak

  • Heat oil in a wide kadai or heavy pan over medium heat.
  • Add cumin seeds, hing, and dried red chilies. Let the jeeru sizzle 10 to 15 seconds.
  • Stir in ginger-garlic-green chili paste. Cook 30 seconds until the raw smell fades.
  • Add eggplant cubes and turmeric. Cook on medium-high 5 to 6 minutes, stirring often, until the edges soften and the pieces look partly collapsed.
  • Add dhana-jeeru, red chili powder, jaggery, methi leaves, and salt. Mix well so the leaves wilt evenly.
  • If the pan looks dry, add 2 tablespoons water. Cover, reduce heat to low, and cook 6 to 8 minutes until the eggplant is fork-tender.
  • Remove the lid. Cook on medium-high 1 to 2 minutes to evaporate any excess moisture. The shaak should look moist but not saucy.
  • Turn off the heat. Stir in lemon juice. Taste and adjust salt or chili. Rest 2 minutes before serving.

Notes

Pressure cooker shortcut: After adding methi and spices, transfer to an Instant Pot, add 2 tablespoons water, and pressure cook on high for 4 minutes with a quick release. Stir in lemon juice after.
This shaak really needs fresh methi leaves. Dried kasuri methi will taste different and can turn bitter if you use too much.
For a milder version, use one dried chili and skip extra red chili powder. Serve with cucumber raita to cool the plate.
Tastes even better the next day as flavors meld. Reheat in a pan with a splash of water.
Store in an airtight container in the refrigerator up to 3 days. I do not recommend freezing; eggplant texture changes after thawing.
