Millet Vegetable Soup (Foxtail Millet, One-Pot)

A warm, gluten free Indian-style soup with foxtail millet, mixed vegetables, and ginger-garlic tempering. Naturally vegan-friendly and perfect for weeknight dinners.

Equipment

  • Heavy-bottom pot or Dutch oven (3 L or larger)
  • Fine mesh sieve (for rinsing millet)

Ingredients
  

Millet and liquids

  • 1/2 cup foxtail millet about 100 g; rinsed very well until water runs clearer
  • 5 to 6 cups water or light vegetable stock
  • 1 tbsp oil or ghee if not vegan

Vegetables (flexible)

  • 1 small onion finely chopped
  • 1 medium carrot diced small
  • 8 to 10 green beans chopped
  • 1/4 cup green peas fresh or frozen
  • 1 medium tomato optional, for light tang; chopped
  • 1 small zucchini optional; diced
  • 1 celery stalk optional; trimmed and diced small
  • 1 cup packed spinach or fenugreek leaves stir in at the end; chopped

Aromatics

  • 1 tbsp ginger-garlic paste
  • 1 green chili optional; slit

Spices

  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp black pepper powder freshly cracked if possible
  • Salt to taste
  • 1/2 tsp garam masala optional
  • 1 tsp lemon juice or 1/4 tsp amchur optional, for brightness

Optional finishes

  • 2 tbsp fresh coriander leaves chopped
  • 1 tsp butter or 1 tbsp thick yogurt skip for vegan

Instructions
 

Rinse (and optional soak)

  • Rinse the millet in a fine sieve under cold water, rubbing gently, until the water is less cloudy.
  • Soak 20 to 30 minutes if you have time, then drain (optional; shortens cooking slightly).

Sauté aromatics

  • Heat oil in a heavy pot or Dutch oven on medium heat. Add cumin seeds and let them sizzle a few seconds.
  • Add onion and sauté until soft and lightly golden, about 4 to 5 minutes.
  • Add ginger-garlic paste and green chili. Cook until the raw smell fades, about 1 minute.

Vegetables and spices

  • Add carrot and beans (and zucchini and celery if using). Stir for 2 minutes.
  • Add tomato if using, turmeric, and a pinch of salt. Cook until the tomato softens slightly, about 3 minutes. Add peas.

Simmer

  • Add rinsed (and drained) foxtail millet. Stir so the grains toast lightly in the oil for 1 minute.
  • Pour in 5 cups of water to start. Bring to a boil, then reduce to a gentle simmer.
  • Cover partially and cook for 22 to 28 minutes, stirring occasionally, until the millet is tender but not mush.
  • If the soup thickens too fast before the millet is done, add the remaining cup of hot water in small splashes.

Finish

  • Stir in spinach or fenugreek. Cook 2 to 3 minutes until wilted.
  • Add black pepper, garam masala if using, and lemon juice or amchur. Taste and adjust salt.
  • Garnish with coriander. Serve hot.

Notes

Water: Start with 5 cups; add the last cup if the soup thickens too fast before the millet is done.
Millet swaps: Little millet works similarly. Kodo or barnyard may need a few extra minutes and slightly more water.
Vegan: Use oil only; skip butter or yogurt finishes.
Instant Pot: Sauté onion through peas, add millet and 4 cups water, pressure cook high 8 minutes, natural release 10 minutes, then stir in greens on Sauté. Check your model's minimum liquid.
Storage: Refrigerate in an airtight container up to 3 days. Reheat with a splash of water on the stovetop.
