Millet Veggie Patties (Crispy, Gluten Free)

Crispy millet and vegetable patties with foxtail millet, mixed vegetables, and a gluten free binder. Pan-fry or air fry; lunchbox friendly.

Equipment

  • Small saucepan with lid (for cooking millet)
  • Large mixing bowl
  • Heavy skillet or nonstick pan (for shallow frying)
  • Spice grinder or small mixer jar (for poha powder)
  • Air fryer (optional)

Ingredients
  

Millet and vegetables

  • 1/2 cup foxtail millet about 100 g; rinsed
  • 1 1/4 cups water for cooking millet
  • 1 small potato about 120 g; boiled, peeled, mashed smooth
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped green beans
  • 1/4 cup green peas fresh or frozen, thawed
  • 2 tbsp finely chopped cabbage or capsicum optional
  • 2 tbsp fresh coriander leaves chopped
  • 1 tsp ginger paste or finely grated ginger
  • 1 green chili optional; finely chopped

Spices and binder

  • 1/2 tsp cumin seeds lightly crushed
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder adjust to taste
  • 1/2 tsp coriander powder
  • 1/4 tsp garam masala optional
  • 1/2 tsp amchur or 1 tsp lemon juice dry mango powder
  • Salt to taste
  • 3 tbsp thick poha flattened rice; binding; naturally gluten free; dry ground to a coarse powder in a mixer
  • 2 tbsp rice flour or 1 tbsp rice flour + 1 tbsp besan if gluten is not a concern

For coating and frying

  • 3 to 4 tbsp rice flour spread on a plate for dusting
  • 2 to 3 tbsp water optional second coat; as needed, to make a thin paste with 1 tbsp rice flour
  • 3 to 4 tbsp breadcrumbs or extra poha powder for crust optional
  • 3 to 4 tbsp oil for shallow frying or use an air fryer; see notes

Instructions
 

Cook the millet

  • Rinse foxtail millet until the water runs clearer. Combine with 1 1/4 cups water in a small pot.
  • Bring to a boil, then cover and simmer on low for 14 to 16 minutes until water is absorbed and grains are tender.
  • Fluff with a fork and cool completely (about 1 1/4 to 1 1/2 cups cooked). Spread on a plate for 10 minutes if you are short on time.

Combine the mixture

  • In a large bowl, mash the boiled potato until smooth. Add cooled millet, carrot, beans, peas, optional cabbage or capsicum, coriander, ginger, and green chili.
  • Add cumin, turmeric, red chili, coriander powder, garam masala if using, amchur or lemon juice, and salt. Mix until evenly combined.
  • Sprinkle poha powder and rice flour over the mixture. Knead gently until the dough holds when squeezed.
  • If it crumbles, add 1 tsp water at a time. If it sticks, add 1 tsp more poha powder or rice flour.

Shape and rest

  • Divide into 10 to 12 portions. Roll into smooth balls, then flatten into patties about 1 cm thick.
  • Lay on a tray lined with parchment. Refrigerate for 20 to 30 minutes.

Coat and cook

  • Heat a heavy skillet on medium heat with a thin layer of oil.
  • Dust each patty lightly in rice flour on both sides. For a thicker crust, dip in thin rice flour slurry, then in breadcrumbs or extra poha powder.
  • Shallow fry 2 to 3 minutes per side until golden and crisp, adding oil as needed. Drain on a rack or kitchen paper. Serve hot with mint chutney, ketchup, or yogurt dip.

Notes

Air fryer: Brush or spray both sides with oil; preheat; cook in a single layer at 180°C (350°F) for 10 to 14 minutes, flipping once, until golden.
Bake: Brush both sides with oil; bake at 200°C (400°F) on parchment 18 to 22 minutes, flipping once (less crisp than shallow fry).
Vegan: Use oil only and a dairy-free dip.
Binding: If patties break, mixture was too wet, too warm, or not rested — add poha powder or rice flour and chill longer; ensure the pan is hot before frying.
Storage: Refrigerate cooked patties up to 3 days; reheat in air fryer or skillet. Freeze uncooked shaped patties between parchment up to 3 weeks; thaw slightly before coating and frying.
Potato swap: Sweet potato or extra poha plus a little paneer changes texture; potato is the most predictable binder for beginners.
