Moong Dal Pasta Bolognese

A hearty vegan bolognese made with split moong dal and walnuts simmered in a rich tomato sauce, then tossed with penne. High-protein, one-pot, and ready in about an hour.

Ingredients
  

For the bolognese sauce

  • 1 1/2 tablespoons olive oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme or use more oregano
  • 1 1/2 teaspoons kosher salt plus more to taste
  • freshly ground black pepper to taste
  • 1 tube tomato paste 5.3 oz / 150 g; from a tube, not canned
  • 1/2 cup dry red wine optional; malbec, chianti, or merlot
  • 3 cups vegetable broth
  • 1 cup split moong dal soaked 30 minutes; yellow or green chilka
  • 1/4 cup walnuts finely crushed or blitzed; or pecans
  • 1 can crushed tomatoes 14.5 oz / 410 g; or whole peeled tomatoes, crushed by hand
  • 1 tablespoon balsamic vinegar high-quality aged; or 1 tsp sugar if omitting

To serve

  • 12-16 ounces penne rigate or tagliatelle; use GF or chickpea pasta if preferred
  • fresh basil or flat-leaf parsley chopped, optional garnish

Instructions
 

Prep

  • Soak the moong dal in cool water for 30 minutes (up to 60 minutes). Meanwhile, dice the onion, mince the garlic, and crush the walnuts finely in a food processor or spice grinder.

Make the sauce

  • Heat a 12-inch deep sauté pan or Dutch oven on medium-high heat. Add the olive oil. Once shimmering, add the onions with a pinch of salt. Cook, stirring occasionally, until a light brown fond forms on the pan, about 5 minutes. Add a few spoons of water to deglaze, then continue cooking until the onions are softened and golden brown, 9 to 10 minutes total.
  • Add the garlic, thyme, oregano, kosher salt, and black pepper. Stir frequently and cook for 60 to 90 seconds.
  • Stir in the tomato paste and cook for 2 to 3 minutes, stirring very frequently, until it darkens to a deeper red.
  • If using red wine, pour it in and deglaze, scraping up any browned bits. Cook for 1 to 2 minutes until the alcohol smell burns off and the mixture looks jammy.
  • Pour in the vegetable broth, stirring to combine. Add the soaked moong dal and walnuts. Bring to a boil, then reduce to medium-low and simmer rapidly for 20 minutes, stirring occasionally.
  • Stir in the crushed tomatoes. Continue simmering for 15 to 20 minutes until the dal is tender but still al dente and the sauce is thick. Stir occasionally to prevent sticking; add a splash of water if needed.

Cook the pasta and finish

  • Meanwhile, boil a large pot of salted water. Cook the pasta until just al dente. Reserve a ladle of pasta water, then drain (do not rinse).
  • Taste the bolognese and adjust salt and pepper. Stir in the balsamic vinegar.
  • Add the hot pasta to the bolognese and toss until well coated, adding pasta water as needed. Garnish with basil or parsley if using. If not serving all at once, toss only the portion you are eating and store leftover sauce separately.

Notes

Soak the moong dal before you start. Skipping this step adds 15 to 20 minutes to the simmer and can leave uneven texture.
Use tomato paste from a tube, not canned paste. The tube version tastes brighter and less metallic.
Blitz walnuts very finely so they melt into the sauce. Hand-chopped nuts can leave crunchy pockets.
Store sauce and pasta separately for best leftovers. Sauce keeps 5 to 6 days refrigerated or freezes up to 3 months.
