Ingredients
  

Kulfi bite mixture

  • 1/4 cup cashews raw or lightly roasted unsalted
  • 1/4 cup pistachios shelled, unsalted
  • 7 to 8 seedless dates pitted, roughly chopped
  • 1/4 tsp cardamom powder
  • 1 pinch saffron strands optional
  • 1 1/2 cups whole milk heated until very hot but not boiling
  • 100 g paneer cubed or crumbled

Instructions
 

Soak and blend

  • In a bowl, combine cashews, pistachios, chopped dates, cardamom, saffron if using, and hot milk. Stir, press dates under the milk, and rest 20 minutes at room temperature.
  • Transfer to a blender. Add paneer. Blend on high until very smooth, scraping the jar once or twice. Add one more soaked date and blend again only if you want extra sweetness.
  • Pour into an ice cube tray. Tap lightly to level. Freeze at least 8 hours or overnight until solid.
  • Unmold cubes. Serve frozen, or rest 1 to 2 minutes at room temperature for a slightly softer bite.

Notes

Very hot milk softens dates faster; blend until no grit for the creamiest texture.
Store cubes in an airtight freezer bag up to two weeks to avoid picking up freezer odors.
For a vegan test, swap paneer for firm silken tofu and use a rich unsweetened plant milk you already like in sweets.
Optional garnish: press crushed pistachios onto cubes after a brief thaw on the outside.
