Paneer Bhurji Recipe (Soft, Juicy, and Ready in 25 Minutes)

Ingredients
  

Main

  • 250 g paneer about 2 cups loosely packed; crumbled
  • 2 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 medium onion finely chopped
  • 1 to 2 green chilies finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 medium tomatoes or 3/4 cup crushed tomato; finely chopped

Spices

  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder adjust to taste
  • Salt to taste

Finish

  • 1/2 tsp garam masala
  • 2 tbsp cilantro chopped
  • 1 tbsp butter optional, dhaba-style finish
  • 1 to 2 tbsp milk optional, for softer texture

Optional add-ins

  • 1/4 cup capsicum extra crunch; diced
  • 1/4 cup green peas sweeter bite
  • 1 pinch kasuri methi deeper aroma; crushed

Instructions
 

Build the masala base

  • Heat oil or ghee in a pan on medium heat. Add cumin seeds; let crackle a few seconds.
  • Add onion; sauté until lightly golden, not deeply browned.
  • Add green chili and ginger-garlic paste. Cook about 1 minute until the raw smell fades.

Cook the tomatoes

  • Add tomatoes, turmeric, coriander powder, red chili powder, and salt. Cook until tomatoes break down and the masala looks glossy and not watery. If liquid still pools, cook 2 to 3 minutes more so the bhurji does not turn soggy.

Add paneer

  • Reduce heat. Add crumbled paneer and fold gently 2 to 3 minutes only until heated through. Do not overcook.
  • Optional: stir in butter for richness, or 1 to 2 tbsp milk right before switching off for extra-soft bhurji.

Finish and serve

  • Off heat, sprinkle garam masala and cilantro. Mix once. Serve hot with roti, paratha, pav, or toast.

Notes

Soft paneer: If store-bought paneer is firm, soak the block in warm water 10 minutes before crumbling.
Gravy-style: Add 1/4 cup water and simmer 2 to 3 minutes before adding paneer; pair with rice (try jeera rice on the blog).
Vegan: Use extra-firm tofu instead of paneer and oil instead of ghee or butter; a pinch of kala namak adds depth.
Storage: Refrigerate in an airtight container up to 2 days. Reheat on low with a splash of milk or water.
