Prep the fillings:
- Chop onions, green pepper, and paneer into small bite-sized pieces.
Infuse the oil:
- Heat mustard oil (or olive oil) until it sizzles. In a mixing bowl, add chili powder and pour the hot oil over it. Let it bloom for extra flavor.
Build the marinate:
- Mix in the chili paste, ginger paste, and garlic paste. Stir well.Add chopped onions, peppers, and paneer into the bowl.
Flavor it up:
- Add the hung curd or Greek yogurt, kasuri methi, garam masala, and a lot of chopped cilantro. Mix until everything is well coated.
Marinate:
- Cover the mixture and refrigerate it for at least 1 hour to let the flavors deepen.
Assemble the sandwiches:
- Spread butter on one side of each bread slice.On the other side (optional), spread cilantro chutney.Add a generous amount of the paneer tikka mixture on one slice.Top it with another slice to make a sandwich, butter sides facing out.
Grill it up:
- Grill the sandwich on a hot pan or sandwich press until both sides are crispy and golden brown, and the filling is hot and melty.
Serve hot:
- Pair with extra chutney, ketchup, and a side of chips.
