Postpartum Panjeeri Recipe (Traditional Healing Mix)

Classic atta panjeeri (panjiri) roasted in ghee with nuts, gond, makhana, and jaggery. A nourishing postpartum and winter snack you can jar ahead.

Ingredients
  

Nuts and specialty mix

  • 2-3 tablespoons ghee plus more as needed while roasting
  • 2/3 cup raw almonds about 100 g
  • 1/2 cup raw walnuts, cashews, or pistachios about 50 g; or a mix
  • 3 tablespoons fine edible gum (gond) crystals about 40 g; use fine crystals, not gond katira
  • 2 cups phool makhana (fox nuts) about 30 g
  • 2 tablespoons kamarkas about 20 g; optional

Fruit, seeds, and flours

  • 2/3 cup golden raisins about 100 g
  • 2/3 cup desiccated coconut or coconut flakes about 55 g
  • 3 tablespoons flax seeds about 24 g; or flax meal
  • 3/4 cup fine semolina (sooji) about 150 g
  • 1 cup whole wheat atta about 120 g
  • 1/2 cup powdered jaggery about 70 g; or cane sugar, or a mix, plus more to taste
  • 1/2 teaspoon cardamom powder optional
  • 1-2 tablespoons melted ghee at the end if the mix feels dry

Instructions
 

Roast the crunchy mix

  • Warm a heavy pan over medium-low heat. Add 2 tablespoons ghee, then the almonds and mixed nuts. Roast 3 to 4 minutes, stirring often, until lightly golden and nutty. Transfer to a bowl. Wipe the pan if bits stick.
  • Add 2 tablespoons ghee and the gond crystals. Roast 4 to 5 minutes until they crackle, swell, and look crisp. Add to the nuts.
  • Add 2 to 3 tablespoons ghee and the makhana. Roast about 8 to 10 minutes until lightly golden and crisp when bitten. Add to the same bowl.
  • If using kamarkas, roast in 1 tablespoon ghee for 2 to 3 minutes until it deepens in color. Add to a large mixing bowl (do not grind kamarkas with the nuts unless you prefer it finer).

Toast the soft mix and flours

  • Lower the heat. Add 1 tablespoon ghee and the raisins. Roast about 2 minutes until they plump. Move to the large mixing bowl.
  • Toast coconut and flax 1 to 2 minutes until fragrant. Add to the large bowl.
  • Wipe the pan. Heat 3 tablespoons ghee, add sooji, and roast 10 to 12 minutes, stirring more toward the end, until golden. Transfer to the large bowl.
  • Without adding more ghee at first, add atta to the pan. Roast 15 to 20 minutes on medium-low, stirring often, until deep golden and biscuit-like in smell. If it looks dry and pasty, add 1 tablespoon ghee mid-roast. Transfer to the large bowl.

Grind and finish

  • Pulse the nuts, gond, and makhana in a food processor to a coarse, grainy mix. Stop before it turns pasty.
  • Add the ground mix to the large bowl with sooji, atta, raisins, coconut, flax, kamarkas (if using), jaggery, and cardamom. Toss well. Taste and adjust sweetness.
  • If the panjeeri feels dry or hard to swallow, stir in 1 to 2 tablespoons melted ghee. Cool completely, then jar.

Notes

Keep heat medium or lower. Bitter nuts mean the pan ran too hot.
Clean the pan between sticky batches so burnt bits do not flavor the atta.
No gond: skip it and add 2 to 3 tablespoons extra roasted almonds.
No makhana: add a handful more nuts or 1/4 cup lightly roasted rolled oats, pulsed coarse.
Gluten-free idea: swap sooji and atta for a mix of besan and roasted chickpea flour or lentil flour; texture will be denser.
Vegan: use coconut oil instead of ghee; flavor shifts toward coconut.
Pregnancy note: many families treat panjeeri as a postpartum food and avoid large amounts during pregnancy. Follow your own care provider's guidance.
Store in an airtight jar at cool room temperature for 3 to 4 weeks, or freeze for longer keeping.
