Soak the chana dal
Rinse 1 cup chana dal until the water runs mostly clear.
Soak in plenty of water with a pinch of baking soda for 4 to 6 hours (overnight is fine).
Drain well. Optional soften: cover with fresh water, bring just to a boil for about 1 minute, then drain and rinse with cold water so the grains stay whole.
Dry thoroughly
Spread the dal on a clean kitchen towel. Pat dry, then leave it out 30 to 45 minutes until the surface feels matte and no beads of water remain. This step decides whether you get crunch or chew.
Oven-roast (primary)
Preheat the oven to 400°F / 200°C. Line a baking tray with parchment.
Toss the dried dal with 1 1/2 to 2 tablespoons oil and 1/2 teaspoon salt until lightly coated.
Spread in a single layer. Roast 35 to 45 minutes, stirring every 10 to 12 minutes, until deep golden and crisp. Start checking at 30 minutes. The dal will firm up more as it cools.
Air fryer alternate
Preheat the air fryer to 360°F / 180°C. Toss dried dal with oil and salt as above.
Air fry 15 to 20 minutes in a single layer (work in batches), shaking every 4 to 5 minutes. Stop when golden and crisp; do not wait for rock-hard, or it will be too stiff after cooling.
Masala toss
While the dal is still warm, sprinkle red chili powder, Kashmiri chili, chaat masala, amchur, black salt, and salt. Toss well so every grain is coated.
Taste and adjust heat or tang. Cool completely on the tray, then store in an airtight jar.
Notes
Drying is non-negotiable. If you rush this, the namkeen stays soft in the center.Kashmiri chili is mostly for that market-style red color; adjust regular chili for heat.For a milder kid jar, cut the red chili and lean on chaat masala and a pinch of amchur.Deep-fry is traditional if you prefer it: fry soaked, thoroughly dried dal in medium-hot oil in small batches until golden, drain, then toss with the same masala while hot.Store only after the namkeen is fully cool. Room temperature airtight jar keeps about 2 weeks in a dry kitchen.
