Rose Cardamom Energy Balls (No-Bake, Indian-Inspired)

No-bake date and cashew energy balls with coconut, cardamom, and a careful touch of rose water. Vegan and gluten-free friendly with certified oats. Maple or jaggery syrup sweetener.

Ingredients
  

Base

  • 1 cup raw cashews about 120 g
  • 9 to 10 soft Medjool dates about 190 g; pitted
  • 1/2 cup unsweetened desiccated coconut about 45 g
  • 1/3 cup gluten-free oat flour about 35 g; certified GF if required
  • 1/4 cup smooth almond butter 60 g

Bind and flavor

  • 2 tablespoons maple syrup OR 2 to 3 tablespoons cooled thin jaggery syrup 30 ml; 30 to 45 ml
  • 1 1/2 teaspoons ground cardamom preferably freshly ground from green pods
  • 1/4 teaspoon fine salt
  • 1/4 to 1/2 teaspoon rose water start low

Optional finish

  • 3 tablespoons finely chopped unsalted pistachios or 2 tablespoons extra desiccated coconut to roll
  • Pinch of dried rose petals

Instructions
 

Oat flour (if needed)

  • If you do not have oat flour, blitz rolled oats in the food processor until fine like sand. Measure after grinding.

Process cashews and dates

  • Add cashews to the food processor and run until finely ground with no large chunks. Add pitted dates and process until evenly chopped and the mixture begins to clump when squeezed.

Build the dough

  • Add coconut, oat flour, almond butter, sweetener, cardamom, and salt. Process until a dough forms that holds when pressed. If greasy, add 1 tablespoon oat flour at a time. If dry and sandy, add a teaspoon of water or half a soft date, pulse, and reassess.

Rose water

  • Add the smaller amount of rose water and pulse just until mixed. Taste a tiny pinch of dough; add rose water in drops only if needed. It is easy to overdo.

Shape and chill

  • Roll into tablespoon-sized balls (about 14 to 16). Optionally roll in pistachios or coconut. Refrigerate at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator up to 7 days or freeze up to 3 months.
Nut-free: replace cashews with raw sunflower seeds processed to a meal and almond butter with sunflower seed butter; texture may be firmer.
Always use certified gluten-free oats if avoiding gluten.
If dough feels oily, chill 10 minutes before rolling for easier handling.
Maple keeps cardamom forward; jaggery syrup adds deeper caramel that pairs with cardamom.
Honey works if you are not strictly vegan.
