Rose Chai Three Ways (Iced Foam, Hot Foam, Hot Syrup Mixed)
One rose syrup supports three serves: iced strong cardamom chai with rose cold foam, hot masala chai capped with cold foam at the last second, and hot stovetop rose masala chai with syrup stirred through for an even blush cup. Tea-first for spring and summer.

Rose syrup
Dissolve sugar in water over medium heat; add petals if using and simmer 2 minutes.
Off heat, stir in rose water. Cool, strain if needed, and refrigerate.
Version 1: Iced chai + foam
Simmer water with cardamom and ginger 3–4 minutes. Add tea; steep 2–3 minutes. Strain, sweeten, cool, then chill.
Whip chilled cream, milk, rose syrup, and salt to soft pourable peaks.
Fill tall glasses with ice, pour chai three-quarters full, cap with foam. Serve immediately.
Version 2: Hot chai + foam
Simmer water and milk with cardamom and ginger. Add tea; simmer 90 seconds to 2 minutes. Strain into warmed mugs, leaving room for foam.
Whip cold foam as for Version 1. Spoon onto each mug at the last second. Serve immediately.
Version 3: Hot syrup mixed
Simmer water and milk with cardamom, ginger, and optional cinnamon. Add tea; simmer 90 seconds to 2 minutes. Remove from heat; stir in sugar, then rose syrup. Taste; adjust. Strain into mugs.
Optional iced from same batch cool strained chai in the fridge and pour over ice.
Notes
Foam needs cold dairy and last-second cap on hot chai or it melts fast.Short tea steep keeps milk chai smooth and avoids bitterness when chilled.Rose syrup keeps refrigerated up to about 3 weeks; chilled brewed chai up to 3 days.
