Ingredients

For the ice cream

  • 2 cups heavy cream chilled
  • 1 can sweetened condensed milk 14 oz
  • 1/2 cup gulkand rose petal jam
  • 1 tablespoon rose water
  • A few drops of pink food coloring (optional)

Garnish

  • Edible rose petals (optional)

Instructions

Whip the cream

  • Pour the chilled heavy cream into a large bowl. Using a hand mixer or stand mixer, beat on medium-high speed until stiff peaks form, about 3 to 4 minutes.

Fold in the flavor

  • Add the sweetened condensed milk, gulkand, and rose water to the whipped cream. If using food coloring, add it now. Fold gently with a rubber spatula until just combined. Do not overmix or the cream will deflate.

Freeze

  • Pour the mixture into a freezer-safe loaf pan or container. Smooth the top with a spatula. Press a piece of plastic wrap directly onto the surface to prevent ice crystals. Cover with a lid or more plastic wrap.
  • Freeze for at least 6 hours or overnight until firm.

Serve

  • Remove from the freezer 5 minutes before scooping. Scoop into bowls or cones and garnish with edible rose petals if using.

Notes

Gulkand vs. rose syrup: Gulkand gives a richer, more complex rose flavor than rose syrup. If you can only find rose syrup, use 3 tablespoons and reduce the condensed milk slightly since syrup adds extra sugar.
Condensed milk swap: For a less sweet version, use 1 cup full-fat coconut cream in place of condensed milk. The texture will be slightly icier but still very good.
Vegan option: Use coconut cream (chilled overnight and whipped) instead of heavy cream, and sweetened condensed coconut milk instead of regular condensed milk.
Storage: Store in an airtight container in the freezer for up to 3 weeks. Press plastic wrap directly onto the surface between uses.
Food coloring note: Gulkand gives a soft natural pink. Skip the food coloring unless you want a brighter, more vivid pink for photos or festive occasions.
