Equipment

  • Bowl or wide-mouth jar
  • Whisk or spoon
  • Measuring cups and spoons

Ingredients

For the rose pistachio base

  • 1 cup rolled oats old-fashioned; certified gluten-free if needed
  • 1 1/2 cups milk dairy or plant milk; plus extra to loosen if needed
  • 1/2 cup thick plain yogurt Greek or hung curd; or thick coconut or cashew yogurt for vegan
  • 2 tablespoons pistachio butter smooth; or 1/4 cup ground soaked pistachio paste
  • 2 tablespoons chia seeds per 2-jar batch
  • 2 tablespoons gulkand or honey maple or sugar work too; start light and taste
  • 1/2 teaspoon rose water food-grade; add last
  • 1/4 teaspoon ground cardamom optional
  • pinch fine salt optional
  • saffron strands optional, a few strands bloomed in warm milk

For topping

  • 3 tablespoons pistachios chopped, for serving
  • dried edible rose petals optional, for serving
  • 1 teaspoon gulkand optional extra drizzle for serving

Instructions

Whisk the pistachio base

  • In a bowl or jar, whisk the milk with the pistachio butter (or ground pistachio paste) until completely smooth.
  • Whisk in the yogurt, cardamom, salt, and sweetener until creamy. If using saffron, bloom it in a spoon of warm milk first and whisk that in now.

Add rose, oats, and chia

  • Stir in the rose water gently as the last aromatic addition.
  • Add the rolled oats and chia seeds. Mix until everything is coated. Let sit 5 minutes, then stir again so the chia does not clump at the bottom.

Chill and serve

  • Cover and refrigerate at least 6 hours, ideally overnight, until thick and spoonable.
  • Give the jar a stir, loosen with a splash of milk if needed, and top with chopped pistachios, rose petals, or a little extra gulkand.

Notes

Rose restraint: start with 1/4 teaspoon rose water per serving. Rose intensifies as it sits, so less is more.
Ratio check: about 1/2 cup oats to 3/4 to 1 cup total liquid (milk plus yogurt) plus chia gives a thick, scoopable jar.
Always do the second stir 5 minutes after mixing so chia does not weld into a lump at the bottom overnight.
Stored airtight in the fridge, keeps up to 3 days. Add fresh pistachio and rose petal toppings only when you serve.
Vegan swap: use plant milk, dairy-free yogurt, and maple or sugar instead of honey.
Kesar pista twist: bloom saffron in warm milk and add an extra pinch of cardamom for a saffron-pistachio version.
