No-bake saffron and cardamom energy bites made with Medjool dates, almonds, pistachios, bloomed saffron, and green cardamom. Soft, fragrant date energy balls with Indian mithai flavor.

1 1/2cupssoft Medjool dates225 g, pitted, about 12 to 14 large dates
3/4cupraw almonds100 g
1/2cupraw pistachios60 g, plus 2 tablespoons finely chopped for rolling
1/2teaspoonfreshly ground green cardamom (elaichi)
pinchfine salt
2tablespoonsrolled oatsoptional, if the mix feels too sticky

Bloom the saffron
Warm the milk until just hot to the touch, not boiling. Add the saffron strands and let them steep 5 minutes until the liquid turns deep gold and smells floral.
If your dates feel dry or firm, soak them in warm water for 10 minutes, then drain well and pat dry. Soft Medjool dates usually need no soak.
Blend and roll
Add almonds and pistachios to the food processor. Pulse to a coarse meal with some small bits left for texture. Do not turn them into butter.
Add the pitted dates, bloomed saffron with its liquid, cardamom, and salt. Pulse until the mixture clumps and looks like a sticky, speckled dough. Scrape the sides once or twice.
Pinch a small piece. It should hold when pressed. If it crumbles, pulse in 1 teaspoon warm milk or ghee. If it sticks heavily to your hands, pulse in the optional oats, or chill the bowl 10 minutes.
Scoop tablespoon portions and roll into firm balls between your palms. Coat with chopped pistachios or coconut if you like.
Set on a parchment-lined plate and chill 20 to 30 minutes until set. Store once firm.

Saffron bloom: Warm liquid is non-negotiable. Cold liquid leaves pale bites with almost no perfume.Date softness: Soft Medjool dates bind best. Harder dates need a short soak and thorough drain so the dough does not turn watery.Texture: Stop pulsing while you still see tiny nut pieces. Fully smooth paste tastes flat and pasty.Too sticky or too dry: Sticky means chill or add a spoon of oats. Dry means one more soft date or a teaspoon of warm liquid.Storage: Airtight in the fridge up to 10 days, or freeze up to 2 months. Thaw a few minutes on the counter before eating.
