This samosa chaat recipe layers crushed crispy samosas with quick spiced chickpeas, seasoned yogurt, cilantro and tamarind chutneys, and sev. Make the components ahead, then assemble at the last minute so every bite stays crunchy.

For the samosas
8to 10 samosasbake, air-fry, or shallow-fry per package or recipe; homemade or good-quality frozen, cooked until very crisp
For assembly and toppings
1/2cupcilantro chutneyhari chutney; add mint if you like

Cook the spiced chickpeas
Heat oil in a deep pan on medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add onion and cook until soft and lightly golden, 6 to 8 minutes. Add ginger-garlic paste and stir 30 seconds until fragrant.
Add tomatoes, coriander powder, turmeric, chili powder, and salt. Cook until the oil begins to separate and the masala looks thick, about 8 to 10 minutes. If it sticks, splash in a tablespoon of water.
Stir in chole masala, then chickpeas. Add 1/2 cup water, bring to a simmer, and cook 8 to 10 minutes until the gravy coats the chickpeas but still loosens easily with a spoon. Add more water if it tightens too much.
Taste and adjust salt, spice, and tang with amchur or lemon. Keep warm until assembly.
Whisk the yogurt
Whisk yogurt until completely smooth. Stir in roasted cumin powder, black salt (if using), and salt.
If too thick to drizzle, whisk in 1 tablespoon of water at a time until pourable.
Prep the samosas
Cook samosas until deeply crisp (one shade past done) so they survive a little steam from the chole. If baking or air-frying, a light brush of oil on the surface helps color and crunch.
Layer and serve
Just before eating, place warm samosas on a plate or wide shallow bowl. Crush lightly with a spoon or chop into large chunks (do not pulverize).
Spoon hot chole over and around the samosa pieces.
Drizzle yogurt, then cilantro chutney and date and tamarind chutney. Start with less tamarind; add more to taste.
Top with onion, tomato (if using), sev, pomegranate, coriander, and a pinch of chaat masala.
Serve immediately.

Vegan: Use unsweetened thick coconut or soy yogurt.
