Sattu Energy Balls

Soft sattu energy balls (classic sattu ladoo) made with roasted gram flour, jaggery, ghee, and cardamom. A quick Bihari-style sweet snack with optional nuts.

Ingredients
  

For the balls

  • 1 cup sattu (roasted Bengal gram flour) 120 g, heaped
  • 1/2 cup jaggery powder 80 g, or finely grated jaggery
  • 3-4 tablespoons ghee melted, plus more as needed to bind
  • 1/2 teaspoon freshly ground green cardamom (elaichi)
  • pinch fine salt
  • 2 tablespoons finely chopped almonds or cashews optional
  • 1 tablespoon roasted pumpkin seeds or sunflower seeds optional, chopped
  • desiccated coconut or finely chopped nuts optional coating

Instructions
 

Warm the sattu

  • Heat 1 tablespoon ghee in a pan over low heat. Add the sattu and stir for 2 to 3 minutes until it smells toasty and feels warm. Do not darken it. Sattu is already roasted, so you are waking the aroma, not cooking it from raw.
  • Tip the warm sattu into a mixing bowl. If using chopped nuts or seeds, stir them in now so they heat through with the flour.

Mix and roll

  • Add jaggery powder, cardamom, and salt. Mix well so the jaggery is evenly distributed. If the jaggery is lumpy, rub it between your palms first.
  • Add the remaining 2 to 3 tablespoons melted ghee. Stir, then knead lightly with your hand until the mix holds when pressed. If it still looks dry and sandy, add ghee 1 teaspoon at a time. The dough should feel warm, soft, and slightly oily, not wet.
  • While still warm, scoop tablespoon portions and roll into firm balls between your palms. Coat with coconut or chopped nuts if you like.
  • Set on a plate to cool completely. Store once firm and at room temperature.

Notes

Do not over-roast: Sattu burns at the edges if the flame is high. Low heat, short time, constant stirring.
Roll warm: Cool mixture crumbs. Warm mixture binds. Remelt a spoon of ghee into the bowl if needed.
Jaggery sweetness: Start with 1/2 cup. Taste a pinch of the mix before rolling and add 1 to 2 tablespoons more if you want a sweeter ladoo.
Nuts are optional: Plain sattu ladoo is traditional and softer. Nuts add crunch for gift-box energy balls.
Storage: Airtight jar at cool room temperature up to 5 days, or fridge up to 2 weeks. Soften a few minutes on the counter if chilled.
