Strawberry Banana Ragi Smoothie

A creamy, naturally sweet finger millet smoothie made with cooked ragi paste, banana, dates, yoghurt, and fresh strawberries. Ready in about 10 minutes and filling enough to count as breakfast.

Ingredients
  

Ragi Base

  • 2 tbsp ragi flour finger millet flour
  • 3/4 cup water to cook the ragi

Smoothie

  • 1/2 ripe banana
  • 2 dates soaked in warm water for 5 minutes if firm; pitted
  • 2 tbsp thick yoghurt or dahi
  • 1/4 tsp vanilla extract
  • 4 to 5 strawberries hulled
  • 1/2 cup water or milk, for a creamier glass
  • Ice cubes to serve (optional)

Instructions
 

Cook the Ragi Paste

  • Whisk 2 tbsp ragi flour into 3/4 cup water in a small saucepan until smooth, with no lumps.
  • Turn the heat to low and keep stirring constantly with a spoon or small whisk.
  • In 3 to 4 minutes the mixture will turn glossy, slightly darker, and pull away from the sides of the pan. Switch off the heat.
  • Let the paste cool for 5 to 10 minutes so it is warm or room temperature before blending.

Blend the Smoothie

  • Add the cooled ragi paste, banana, pitted dates, yoghurt, vanilla, strawberries, and 1/2 cup water to a blender.
  • Blend on high for 45 to 60 seconds until completely smooth, scraping the sides once if needed.
  • Taste and adjust. Add an extra date for more sweetness, or a splash more water for a thinner glass.
  • Pour over ice in a tall glass and serve cold. Top with a sliced strawberry if you like.

Notes

Cook the ragi flour first; never drop raw ragi flour into a cold smoothie. The cooked paste removes the raw taste and is much easier to digest, especially for kids and sensitive stomachs.
The ragi paste is ready when it turns glossy and pulls cleanly away from the sides of the pan. That visual cue matters more than the timer.
For a vegan version, swap the yoghurt for plain plant yoghurt (coconut, almond, or cashew) and use plant milk in place of the blending water.
For a toddler-friendly glass, skip the strawberries until your pediatrician okays berries, thin the smoothie with extra milk, and serve in a small cup, not too cold.
For meal prep, cook the ragi paste in a slightly bigger batch and store it covered in the fridge for up to 2 days. Blend a fresh glass each morning in about a minute.
Store leftovers in a sealed glass jar in the fridge for up to 12 hours. Shake or re-blend before drinking.
