Stuffed Mango Kulfi Two Ways (Classic Milk + Nourishing Nut and Makhana Fill)

Ripe whole mangoes hollowed and filled with either classic reduced-milk kulfi scented with cardamom and saffron, or a blended filling of almonds, cashews, makhana, oats, dates, and mango. Freeze overnight, then peel and slice.

Equipment

Ingredients
  

For hollowing and assembly (both methods)

  • 4 large ripe mangoes with stems attached if possible prefer Alphonso or another sweet, firm-fleshed variety; for 4 servings; see notes to scale down to 2 fruit
  • Plastic wrap, for sealing

Classic reduced-milk filling (fills about 2 large hollowed mangoes; double if filling all 4)

  • 2 cups whole milk
  • 2 tbsp granulated sugar taste after simmer; adjust before cooling
  • 2 tbsp full-fat milk powder
  • ½ tsp ground green cardamom or seeds from 4 pods, crushed
  • 6 to 7 saffron strands optional; rubbed into 1 tsp warm milk

Nourishing blended filling (fills about 2 large hollowed mangoes; double if filling all 4)

  • 2 large mangoes reserved for shells from the line above; plus 1 additional ripe mango for pulp and small dice
  • ¼ cup raw almonds
  • ¼ cup raw cashews
  • 1 cup makhana fox nuts
  • ¼ cup rolled oats
  • 6 to 7 soft pitted dates more if you like a sweeter fill
  • cups whole milk substitute unsweetened almond or coconut milk for a plant-based version; heated until steaming
  • 1 to 2 tbsp milk powder optional, for body
  • 1 tsp pure vanilla extract

Instructions
 

Prep the mango shells (both methods)

  • Slice a thin cap off the stem end of each mango, keeping the cap as a lid. Score flesh around the pit if needed, then work a small spoon around the stone to hollow the center without breaking the peel. Twist the seed free; trim any fibrous bits so the cavity is smooth. Stand each mango upright in a small cup or muffin well if it wobbles.

Classic reduced-milk filling

  • In a saucepan, combine milk, sugar, milk powder, cardamom, and saffron milk if using. Bring to a boil, then reduce heat and simmer gently, stirring often, until the liquid is reduced by about half and coats a spoon. In my pan this is usually 18 to 25 minutes; lower heat if the milk foams over.
  • Pour into a bowl and cool to room temperature, then refrigerate until thoroughly cold, at least 2 hours.
  • Fill each prepared mango to the brim, set the cap on top, wrap tightly with plastic to seal the seam, and freeze at least 8 hours or overnight.

Nourishing blended filling

  • In a heatproof bowl, combine almonds, cashews, makhana, oats, and dates. Pour hot milk over and let stand 30 to 40 minutes until nuts soften and dates are pliable. Blanch and peel almonds if you prefer a smoother blend, or skip peeling for more texture.
  • Dice the extra mango. Add soaked mixture to a blender with diced mango, any scooped pulp you reserved from the shell mangoes, optional milk powder, and vanilla. Blend to a thick, spoonable purée, adding a splash more milk only if the machine stalls.
  • Divide the purée among hollowed mangoes, cap, wrap tightly, and freeze overnight.

To serve (both methods)

  • Remove from freezer 5 to 8 minutes before slicing if your mangoes are very hard. Unwrap, peel away the skin with a paring knife, then slice crosswise into wedges. Serve immediately while the center is still cold and creamy.

Notes

Each filling quantity covers about 2 large stuffed mangoes; double one filling if you are stuffing all four fruit with the same method.
Too-soft mangoes tear or leak; pick fruit that yields slightly when squeezed but still feels heavy.
Cold dulls sweetness; taste classic milk while warm, and taste the blended fill before freezing.
Best within about 5 days in the freezer, well wrapped; longer storage grows ice crystals.
Overnight freeze is part of the recipe; active time does not include passive chilling or freezing.
