Tiramisu Barfi

Eggless Indian-Italian fusion dessert with espresso-soaked Parle-G biscuits, soft milk powder barfi, and cocoa dust. No mawa; sets in a few hours.

Ingredients
  

For the espresso base

  • 18 Parle-G biscuits or similar tea biscuits; divided into two layers of 9
  • 1½ tsp instant espresso powder or strong instant coffee
  • 3 tbsp hot water

For the barfi layer

  • 2 tbsp ghee
  • 1 cup whole milk
  • 2 cups full-fat milk powder about 250 g; Nestlé NIDO or similar
  • ½ cup granulated sugar 100 g; increase slightly if you like very sweet mithai
  • ½ tsp ground cardamom
  • 1 tsp vanilla extract
  • 2 to 3 tbsp chopped pistachios or almonds optional, for topping

To finish

  • Unsweetened cocoa powder, for dusting

Instructions
 

Build the biscuit base

  • Line a small loaf pan or 8-inch square pan with parchment, leaving overhang for easy lifting.
  • Arrange 9 Parle-G biscuits in a single snug layer on the parchment.
  • Stir espresso powder into hot water until dissolved. Let cool 1 minute so it is warm, not boiling.
  • With a silicone brush, lightly brush the first biscuit layer with about half the espresso. You want damp, not swimming.
  • Add the second layer of 9 biscuits on top. Brush the top layer more generously with the remaining espresso. Keep the bottom layer lighter so the stack stays sturdy.

Cook the barfi mixture

  • Put a heavy non-stick pan on low heat. Add ghee and let it melt.
  • Pour in milk and stir to combine with the ghee.
  • Add milk powder gradually, whisking constantly to break up lumps.
  • Stir in sugar. Keep the heat low and stir often until the mixture thickens and starts to pull away from the pan sides after about 10 to 15 minutes.
  • When the mass looks like a thick, smooth paste and moves as one piece when you tilt the pan, remove from heat.
  • Off heat, mix in cardamom and vanilla. Work quickly while the mixture is still spreadable.

Assemble and set

  • Spread the hot barfi evenly over the espresso-soaked biscuits. Press gently so the layers stick.
  • Dust the top with cocoa powder through a fine sieve. Add chopped nuts if using.
  • Cool to room temperature, then cover loosely. Let dry at room temperature at least 2 to 3 hours, or overnight for the cleanest cut.
  • Lift out using the parchment overhang. Slice with a sharp knife wiped with a little ghee or oil between cuts.

Notes

Cook on low heat throughout. High flame can caramelize milk powder and turn the barfi beige or grainy.
Do not skip vanilla; it bridges the coffee and milk layers like mascarpone would in classic tiramisu.
Instant espresso gives a cleaner coffee note than regular instant coffee.
Parle-G contains wheat; use a GF cookie you trust if needed. Marie biscuits or plain tea cookies also work.
Optional upgrade: stir 2 tbsp mascarpone into the barfi off heat for extra richness.
Store in an airtight container in the refrigerator up to 5 days. Bring to room temperature 20 minutes before serving.
Flavor deepens after a night of resting; this is an excellent make-ahead mithai.
