Instructions
Bloom and simmer
Set the saucepan over medium-low heat and add most of the milk, reserving a splash for the next step.
Optional bloom: heat ghee or oil until fluid, whisk in turmeric off the heat briefly, then return to low and whisk in a splash of milk to make a smooth paste. If skipping oil, whisk turmeric into a little warm milk instead until smooth.
Add ginger, cinnamon, and cardamom, then the rest of the milk. Simmer gently 4 to 6 minutes (not a full rolling boil) until evenly golden and fragrant. Skim skin if you want a clearer surface for guests.
Stir in sweetener to taste, then pepper and salt if using. Taste and adjust: if harsh or bitter, add a touch more sweetener or a splash of milk.
Strain into pre-warmed mugs if you like a smoother sip, or pour as-is.
Notes
Coconut milk works as a different drink with its own flavor story; treat it as a variation, not a straight swap.
Leftovers keep in a jar in the refrigerator up to 2 days; shake before gently reheating over low heat without boiling hard.
Turmeric stains mugs and fabrics; rinse spills quickly.
