Vagharelo Bhaat (Gujarati Leftover Rice)

Ingredients
  

For the vaghar

  • 2 tbsp neutral oil or ghee for a richer version
  • 1 tsp black mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp hing asafoetida
  • 8-10 fresh curry leaves
  • 1-2 green chilies adjust to heat preference; slit lengthwise
  • 1 small onion optional; omit for Jain; finely sliced

For the rice

  • 3 cups day-old cooked basmati rice cold from the fridge
  • 3/4 tsp turmeric powder
  • 1 tsp red chili powder adjust to taste
  • Salt to taste

To finish

  • 3 tbsp fresh cilantro finely chopped
  • Plain yogurt or cucumber raita, to serve

Instructions
 

Prep the rice

  • Remove the cold rice from the fridge. Using your fingers or a fork, gently break up any large clumps. You want individual, separate grains before they go into the pan.

Build the vaghar

  • Heat oil in a large heavy-bottomed pan or kadhai over medium-high heat. The oil must be properly hot before anything goes in.
  • Add mustard seeds. Once they start to pop and splutter (15-20 seconds), add the cumin seeds and hing. Stir for 10 seconds.
  • Add the curry leaves, then stand back briefly; they will splutter. Add the green chilies and stir for 30 seconds until fragrant.
  • If using onion, add it now with a pinch of salt. Cook 3-4 minutes, stirring, until soft and translucent.
  • Add turmeric powder and red chili powder directly into the oil. Stir for 20 seconds so the spices bloom in the fat before the rice goes in. This is what gives the rice that even, golden color rather than speckled patches.

Cook the rice

  • Add all the cold rice to the pan at once. Using a spatula, fold the rice through the vaghar with a gentle turning motion rather than pressing down. You want to coat every grain without breaking them.
  • Season with salt. Increase heat to high and stir-fry for 3-4 minutes until the rice is piping hot throughout and the grains are well-coated with the golden spiced oil.
  • Taste, adjust salt, and turn off the heat.

Finish and serve

  • Add the fresh cilantro and toss through. Serve immediately with plain yogurt alongside.

Notes

Cold rice is the secret: warm or freshly cooked rice turns mushy. Overnight fridge rice gives you the dry, separate texture that makes vagharelo bhaat satisfying rather than claggy.
Ghee swap: replace oil with ghee for a richer, more festive flavor.
Jain variation: omit onion, garlic, and green chili. Use a pinch more hing and a pinch of ginger powder to add depth.
Kids' version: use only 1/4 tsp red chili powder and swap green chili for a pinch of black pepper.
Millet swap: day-old foxtail millet rice works beautifully here — same method, extra nutrition.
Storage: best eaten fresh. Refrigerate in an airtight container for up to 1 day. Note this rice has already been stored once, so do not keep it longer than that.
