Valor Muthia Nu Shaak (Jain Undhiyu Style)

Gujarati flat bean sabzi with methi muthia in a spiced tomato gravy. A quick Jain undhiyu with undhiyu masala for classic winter flavor.

Ingredients
  

For methi muthia

  • 1 cup fresh methi (fenugreek leaves) finely chopped
  • 3/4 cup besan (gram flour)
  • 3 tablespoons whole wheat flour
  • 1 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon ginger-green chili paste Jain: increase to 1 1/2 tbsp, no garlic
  • 1 teaspoon oil
  • salt to taste
  • 2 tablespoons water as needed to bind dough

For valor sabzi

  • 3 cups valor papdi stringed and chopped
  • 2 tablespoons oil plus 2 tbsp more if shallow-frying muthia
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • pinch asafoetida (hing)
  • 1 bay leaf optional
  • 1/2 cup tomato puree or 2 ripe tomatoes, pureed
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin-coriander powder (dhana-jeeru)
  • 1/2 tablespoon red chili powder to taste
  • 1 teaspoon sugar or jaggery powder
  • 1 tablespoon undhiyu masala up to 1 1/2 tbsp
  • 1 1/2 cups water
  • salt to taste
  • 2 tablespoons fresh coriander chopped
  • 2 tablespoons fresh coconut grated, optional

Standard version only (skip for Jain)

  • 1 small onion finely chopped, or 1/2 cup onion paste
  • 3 cloves garlic minced, add with green masala if using

Instructions
 

Prep the muthia

  • Mix methi, besan, wheat flour, ajwain, turmeric, chili powder, ginger-chili paste, oil, and salt. Add water a spoon at a time until you get a firm, pliable dough.
  • Shape into small oval dumplings (about 15 to 18). Steam on a greased plate for 12 to 15 minutes until a knife comes out clean. Set aside. Optional: shallow-fry steamed muthia in 2 tbsp oil until lightly golden.

Cook the valor gravy

  • Heat 2 tbsp oil in a pressure cooker or deep pan. Add mustard seeds, cumin, hing, and bay leaf. Let them crackle.
  • Jain / no onion no garlic: skip onion and garlic. Add tomato puree directly and sauté 2 minutes.
  • Standard version: sauté onion until soft, then add garlic and tomato puree. Cook until oil begins to separate.
  • Stir in turmeric, coriander powder, cumin-coriander powder, chili powder, sugar, and salt. Sauté 1 minute.
  • Add chopped valor and 1 1/2 cups water. Mix well. Pressure cook 2 whistles on medium-high, or simmer covered 18 to 22 minutes until valor is almost tender.

Finish with muthia and undhiyu masala

  • Open the cooker carefully. The gravy should be semi-thick. Add more hot water if valor looks dry.
  • Gently fold in steamed (or fried) muthia one at a time so they do not break.
  • Sprinkle undhiyu masala (start with 1 tbsp, taste, add up to 1 1/2 tbsp). Simmer uncovered on low 5 to 7 minutes until muthia absorb the gravy.
  • Garnish with coriander and coconut. Serve hot.

Notes

Undhiyu masala is the flavor shortcut. Without it the sabzi is still good, but it will taste more like everyday shaak than Jain undhiyu.
For a pressure-cooker one-pot method, drop raw muthia into boiling valor water before sealing. Cook 2 whistles, then finish with undhiyu masala in an open pan.
Substitute valor with fresh green beans or snap peas when flat beans are out of season. Cooking time drops by a few minutes.
Store leftovers in an airtight container in the fridge up to 2 days. Reheat gently with a splash of water so muthia stay soft.
Serve with methi thepla, puri, or mag ni chutti dal for a full Gujarati thali.
