Instructions
Soak and grind
Rinse rice and urad dal separately. Soak rice in plenty of cool water. Soak dal with fenugreek in a separate bowl. Soak at least 5 hours or overnight.
Drain dal, reserve soaking water. Grind dal with methi until very fluffy and smooth, adding splashes of reserved water as needed for a thick, airy paste.
Drain rice. Grind to a fine paste; a little fine grit is acceptable and softens during fermentation.
Combine pastes in a large bowl. Add salt. Batter should be thicker than dosa batter but still pourable. Cover loosely.
Ferment
Rest in a warm spot 8–14 hours until risen and pleasantly sour. In cool kitchens, use an oven with the light on (oven off). Stir gently before adding vegetables.
Vegetables and steam
Prep vegetables; squeeze all grated vegetables well and pat blanched beans dry if needed. Fold vegetables into batter until evenly distributed without overmixing.
Lightly grease idli moulds if needed. Fill each depression about three quarters full.
Steam over simmering water 12–14 minutes until set and a toothpick comes out clean. Rest trays 2 minutes, then unmould with a wet spoon. Serve hot with chutney and sambar.
Notes
Extra moisture from vegetables is the most common cause of dense idlis; always squeeze grated carrot, lauki, or zucchini before folding in.Grind urad dal until truly airy; under-ground dal leads to heavy idlis.Refrigerate leftover batter up to 2 days in a clean airtight container; stir gently before steaming.Store cooked idlis refrigerated up to 2 days; reheat in a steamer for best texture.Freeze cooked idlis up to about a month in a freezer-safe bag; thaw overnight in the fridge and steam to refresh.
